QUICK FIX CHICKEN HARIYALI KEBAB


On weekends, we wish to treat ourselves, family with something different, say some kebabs or fries, cooling down with your favourite wine, relax. There are variety of kebabs, done using varied spices, fish, meat, vegetables. They are prepared in many ways in different regions, countries, from Middle East to South East Asia .

Originally / authentically, may be kebabs were done with lamb or beef. Succulent pieces of meat were marinated using various spices, then roasted on skewers over slow heat. These days, chicken, vegetable, paneer.....anything can be used.

Yesterday was Saturday, I wished to have some kebabs, but was not in mood to dine outside. I had some yogurt and chicken in refrigerator, lazy mind wanted some quick fix chicken kebabs. I was really not in mood to use skewers, then slow cook.....Here goes my quick fix chicken hariyali kebabs we would cook together while listening to some good music.


INGREDIENTS  :

Chicken ( boneless ) : 500 gm
Plain Yogurt : 150 gm
Coriander leaves : 200 gm
Garlic Paste : 2 tsp
Ginger Paste : 1 tsp
Green Chilli Paste : 2 nos.
Salt : As per your taste
Onion Paste : 2tbsp
Crushed Black Pepper : 1/2 tsp
Gram Flour : 1 tbsp
Oil : 2 tablespoon

PROCEDURE :

Cut boneless chicken into small pieces, wash thoroughly. Beat yogurt to smooth paste, pour onto chicken.

Discard roots of coriander, wash, put into blender along with green chillies. Get a smooth paste, add to chicken. Add rest of ingredients. Fold in well.

Refrigerate in closed container for at least 2 hours.Take out an hour before cooking, transfer to an oven proof plate along with marination.

Place low wired stand inside, place plate atop stand!

I cooked in Microwave + Grill option for 15 minutes, took out.

I greased a roti sekna / chakni, a manual wired rack with handle with oil, placed almost cooked chicken pieces on them.

I brushed oil, cooked on fire until that burnt look! 

Once done, transfer onto serving plate. Squeeze lemon juice on kebabs. Garnish kebabs with  coriander leaves, onion rings.
