TANDOORI ALOO


If you are tired of non-vegetarian appetisers and looking for a vegetarian option, you can prepare something easy with POTATOES... the starchy tuberous crop which is an integral part of the world's food supply. Being the world's fourth-largest food crop it has over a thousand of variety [wiki]. This universal vegetable can be cooked in varied ways. 

In whichever way we cook it, it tastes amazing. Just bake it, boil it, sprinkle some black pepper, salt, squeeze some lemon juice on the top, and ohhhh, it's yum. An ardent potato lover like me had to lessen the consumption of potatoes once diagnosed with diabetes. The unhappy soul literally craved for it. When the doctor told once we boil it and throw away the water, it is less harmful, deep inside there was nothing but joy.

This spice laden TANDOORI ALOO was prepared for my visiting vegetarian friends. I have used the Holland Potato variety we have regular. The otherwise quiet, stubborn girl loves spices in her "food". She calls herself the "Mistress of Spices." My Let us see how we do it. I have done it on the stove top, we can oven cook too.


INGREDIENTS :

Potato : 3-4
Hung Plain Yogurt : 1/2small cup [I did not hang it]
Ginger Extract : 2-3 tbsp
Cumin Powder : 1tsp
Coriander Powder : 1tsp
Red Chilli Powder : 1tsp
Tandoori Masala : 2 tsp
Turmeric Powder : 1/2 tsp
Salt : As required
Lemon Juice : 2 tbsp
Oil : 2-3 tbsp

METHOD :


Wash and wipe the potatoes. Make slits on them with a knife and microwave for 4-5 minutes.

Cut each potato into 4 pieces. Beat together the hung yogurt [I used thick scoops], salt, all of the powdered spices, ginger extract, lemon juice, 2 tbsp oil. 

Pour the mixture onto the boiled potatoes and mix well, keep aside for an hour.

Heat a pan on the stovetop, cook the marinated potatoes for 2-3 minutes at minimal heat.

As the gravy dries a bit, take the potatoes on a manual rack / grill with handle. 

Grill all the sides well at low heat on the stove top.

Once done, take in a bowl, add the rest of the oil, mix well and serve hot.
