MICROWAVE CHOCOLATE KIWI CAKE

A QUICK CAKE IN A MICROWAVE?

It does make a sense at times, if not at all times. Say, whilst alone at home, an instant craving for some DESSERT can be met with the help of such QUICK MADE FOOD IN A MICROWAVE. If done cautiously, the CAKE would not turn dry either. My main complain about cakes made in microwave was their dry texture. Its more of an individual fault than of the machine; if we can take control of the temperature level, with some knowledge & practice; good, homely cakes can be cooked in the MICROWAVE MODE. Take note of the word "homely", professional bakers may not approve of a cake done in a microwave mode. But when they are alone at home and are not in the mood to cook elaborate for themselves; won't they look for quick something? We crave for more food as a company when we are alone. In such a situation, an easy, quick cake like this MICROWAVE CHOCOLATE KIWI CAKE can just be the right thing to get you smile. One can use any FRUIT, I happened to have this juicy, very sweet, red variety of Kiwi fruit at home.

WHY DO I PREFER A CHOCOLATE OR COFFEE CAKE IF DONE IN MICROWAVE THE MODE?

Its just for the colour and nothing else. A cake done in the microwave mode never can give us the brown look; it will look as white as an idli. I do not know what the experts would say in this matter. It is not today, I had been trying coloured cakes in microwave mode for many years now. I do not like spending time cooking something which is not my family recipe or Bengali or Indian. For experimental cases, I will not sweat and tense, the journey should make me happy; the experience should be relaxing. Trying for so many years, finally I found out how to make a moist cake in the MICROWAVE MODE. Later, in the stepwise pictures, you will see, I added chunks of chocolate in the cake batter, that made it gooey and moist, the Kiwi fruit cubes were a boon.

A FIFTEEN MINUTES START TO FINISH MICROWAVE CAKE, MICROWAVE CHOCOLATE KIWI CAKE FOR BACHELORS, STUDENTS, EVERYONE WHO LIVE ALONE!

Earlier, last week, I was making plans for such a cake, which anyone who are staying away from their own can prepare to boost their spirit. In that jazz of celebration, let there be a thought for those who would be staying far from their home, unable to celebrate due to a virus threat that has crippled our life. We have the ability to bypass the fear, if at least we are together, sitting under one roof, eating food from the same table. But no, this is not the case for everyone. There are many who have to spend the festive season alone, in a single room. I must get something for them, because the thought is tearing me apart. These days, they get microwave at rent too. It is not a big deal to prepare a VEGETARIAN DESSERT like this MICROWAVE CHOCOLATE KIWI CAKE  in few minutes using very few INGREDIENTS. Let us do it. I do not even have the mind to elaborate why I chose to share a SOLO CAKE today!

I have taken the measurements to cater to one person, its a cup cake. You can increase the amount as per your requirement. It is so rich in taste, that the three of us shared from that one; it can be a full meal for one.

INGREDIENTS :

REFINED FLOUR : 2 TBSP
COCOA POWDER : 1 TBSP
BAKING POWDER : 1/4 TSP
BAKING SODA : 2 PINCH
PLAIN YOGURT : 4-5 TBSP [I USED MILKY MIST]
BROWN SUGAR : 1 TBSP
DAIRY MILK CHOCOLATE : 50 GM
KIWI FRUIT : 1 [ I USED THE RED, SWEET VARIETY]
CINNAMON POWDER : 1/4 TSP
VANILLA EXTRACT : 1-2 DROP
OIL : 2 TBSP

PROCEDURE :

We will take the refined flour, cocoa powder, baking powder and baking soda in a bowl and mix together very well.

We will then take the yogurt, sugar and oil in a blender and blend together to get a smooth paste.

Then, we have to add the flour mixture in batches and blend the entire thing to a batter without any lump. Do not over beat.

We have to transfer the batter to a bowl and add the cinnamon powder and 2-3 drops of vanilla essence; and mix well.

Thereafter; we will peel, wash, chop the Kiwi fruit and add to the batter, give a stir to mix.

We then will transfer the batter to a microwave proof mug; I used a 2$ worth glass I got from Daiso, Japan.

We will roughly break the chocolate pieces and add to the batter. We will tap the glass lightly on the kitchen top.

We will be using the microwave mode to prepare the cake. So, we will just place the batter filled container in the middle of the disc.

We will gently close the oven door . I cooked it at 600 power for 3 minutes.

You must remember, every machine is different. We need to adjust the temperature after trying and testing in our own machine.

I suggest, you have it warm and fresh. This MICROWAVE CHOCOLATE KIWI CAKE is more of a dessert that a cake. A scoop of ice-cream on top is a fabulous idea.
