VEGAN GLUTEN-FREE MANGO CUSTARD



I HAVE FOUND WHAT I WAS LOOKING FOR; A LIGHT TEXTURED DESSERT!

Earlier I attempted at desserts with vegan milk, each one did we like! I specifically liked this, the stomach did not feel heavy! Rich desserts, rich chocolates, fondants, too sugary stuffs do not suit me. The sugary cherries you see are not my kind, nothing better than a fresh fruit dessert to me! I got a packet of them unwilling to buy a tiny fresh strawberry packet for 10$! If strawberry was mango, I could have payed the double. Strawberry looks beautiful from outside, I find it sour, with cream I can have it! The rest at home speaks of kiwi, cherry, strawberry but want peanuts, not even a mix of dry fruits in the evenings! All are at home today; but I went out for a walk, to buy few chocolates to carry! I feel tired at this time, but adding recipes to my blog is a pleasure! I do not like freaking out regular with friends; but I am a human, there has to be a place where I can pour in! I have ceased to trust people I did once; they were few and all of them I see are eager to build relationship amongst themselves, with every other person on this earth except me! What goes on at my back can be alarming! I know I am a fool but people having fun at it is wrong! Moving a step towards them feels scary! They do not understand me, I cannot explain myself to them and they have something else on their mind! I own my blog, here too I feel tied since the day I knew how actually the social media is run! What relationship mean there!

SOCIAL MEDIA MAY NOT SUIT ME; BUT MY BLOG NEEDS TO REACH PEOPLE!

I don't follow trends, I do not follow anyone's footsteps; my limited brain matter would not allow that! I am already exhausted trying to revive relationships; I see their interest is somewhere else; something kept brewing behind me; there was not a single true friend who told  me the truth! Because I cannot move a bit without love and only pure love coming my way, I felt they are ignoring me, hence I need to quit such associations! Not everyone is my child; I carried him, it's my blood clot! I would stand by him strong, although I get irritated at his weird behaviour towards me! If he talked to me enough, I would have told him few things! My wishes cannot be his but I would have been happier if he listened to me a bit! Rest anyone can have any amount of friendship among themselves; I quit because I find myself standing like a fool amidst them! Who I considered my aide, is not behaving like a friend, the moves seem doubtful! About the son? He won't listen like the brother did until a point! 

WHAT IS VEGAN GLUTEN-FREE MANGO CUSTARD?

It is done with one fresh, ripe mango & soy milk. I am not fond of soy milk neither can have cow or buffalo milk. The son used to have it a lot during his stay here. Mango is a love. I am cooking simple these days, I have to travel; neither feeling well! I am not in the right spirit, all of a sudden I feel being cheated, fooled! Anyway, my food will speak for myself, it would serve well even the people who have been fooling me all through! I am not interested in their love story, bedroom story, hate story; anything! I can give only when I get a lot from them! This dessert VEGAN GLUTEN-FREE MANGO CUSTARD may just suit for the day! On my walks; I would listen to music, today while I was listening to "neel e neel e ambar par, chand jab aaye"; it was day time, it was cloudy, no moon was to be seen, I clicked instantly.



I cannot let my romantic self die; life cannot be a mundane affair! I baked a cake this morning, having it with my evening cuppa!


To my company, I have Alka Yagnik to Sadhna Sargam to Udit Narayan, Kumar Shanu! If I say Madhuri did Raja, the film with the famous song "Nazrein Mili Dil Dharka, Meri Dharkan Ne Kaha" on Anil Kapoor's request because his brother never knew acting, people  take it differently, family structure matching starts! Neither Sunny Deol or Bobby Deol, but Abhay Deol definitely is a good actor. If I share Sadhna's "Pehla Nasha", people would start speculating! Oh yes! indeed I have a similar story to tell, I had a major crush on a teen who preferred hot stuffs like Pooja Bedi and got one ultimately; the family indeed got the person a voluptuous, glamorous partner! Now the entire family and their loyal friends are all set to show off how happy they are! What am I to do here? My people are rebels, do not wish to be seen! I wish to keep the romantic in me alive, these people may stay at far! I am good enough with a head phone and hand phone, food as company! In my remote corner, I know the son would never let me down! Ain't for him mumma changed the garnish a bit? I still have time to share what I ate today, yesterday, the day before!




INGREDIENTS :

SOY MILK : 1 LITRE [I USED A SWEETENED VARIETY]
FRESH RIPE MANGO : 1 OR 2 
SUGAR : 2 TBSP OR AS PER REQUIREMENT
VANILLA ESSENCE : 1/2 TSP
CORN FLOUR : 2 TBSP
YELLOW FOOD COLOUR : A DROP OR TWO
GARNISH AS PER YOUR CHOICE

PROCEDURE :


At first, I got the pulp of the mango and smoothened it in a blender!


I took it in a sauce pan and simmered for about 9-10 minutes!



I took it down and put for boil the soy milk taken in a vessel.


In a glass, I reserved some milk, to which I added some corn flour!



Then, I added it to the boiling milk! I kept boiling the milk, constantly stirred it! Else there is a chance to burn!


After about 10 minutes; I added the cooked mango pulp and a drop of food colour, kept stirring!



After 5-6 minutes; it looks as below!


Thereafter, I wished to set it; but it was more of a custard with little amount of cornflour, cannot be a set pudding!



It has to cool, chilled for few hours; garnished and eaten thereafter!

HERBED SALTY WAFFLE


 
AT TIMES HAPPINESS IS NOT NEEDING TO EDIT A PHOTO!

Those were cooked and clicked one week back on the night of 6th of March! It was a Sunday, I did it all alone. It is not a big deal to prepare a batter and pour into the waffle maker, true. But I am used to Cristine's assistance. I would travel to Kolkata shortly, I am constantly managing from here which help would come when! I would have to get my home thoroughly cleaned, then can be at peace! Because the elderly woman already went there the day before, I can go and sleep on a clean bed! I am going after almost three years; a lot of repair work, bank related work, shopping are to be done. I meet people, yet not enough it seems. There are still some friends and relatives who remain left out. This time I would make one thing clear, that all are welcome to our home but in groups; whether they are interested or not matter to me! I have started to believe if one wishes to, he or she would make an effort to come to me, there need not be any insistence from my side! Although my loving family members are there, I would not want to stay more than a month! I am not being dramatic; I indeed miss this island a lot; also more stay means a huge expense because I keep shopping this & that! I must buy few sets of new clothes for my God Family, get made to order "balish-toshok" for my Laddoo-Krishna! I go with a lot of work in hand, you would see me there in various spots all day! Before going, I need some preparations, stocking piles of my medicines, a bit of buying this and that! I really cannot travel alone with a heavy luggage! Three years of sitting idle in the island is making me feel insecure too! Has the virus made us feel comfortable been at home? Who of you are there who hate wearing a mask? Its not about hating to; today too when I was walking from the doctor's chamber to Hougang, my old neighbourhood; I was having breathing trouble. I have the scare but meeting the grandmother is required!

WHAT I ATE, WHAT WAS I DOING SINCE MORNING?

I had to go to my doctor to get my medicines. There was a long queue today, all the elderly beings came for the Covid test to be done. I asked one of the three sister nurses to do the blood sugar check and the blood pressure too! They gave me the necessary medicines for two months; there I would go to my dentist, eye surgeon, skin specialist! Why the number 52 is chasing me? Shane Warne had a team of doctors to look after him, yet! I do not stop chirping; I do not act old! I went for cleaning my eye brows, then did that yearly once ritual of eye brow embroidery, I have a couple of boy friends staying in my Kolkata condominium, what would they think otherwise? My eyebrows are paining at this time; yet I do a little of maintenance, 50 does not mean confining the self inside the temples! I should do everything in good measure; no wonder I enjoy cocktails! I am a fan of various genre of music, all at the same time! Because I would be late back home; I ate a choice meal of mushrooms, chicken, egg plant, scrambled egg around 2 pm!



Back home, I had a fulfilling meal with mochar ghonto and motor dal er tetul tok! It was I who some three and half decades back created ruckus if there had no fish or meat on my plate! I got home a kind of Kueh, the green part is a lightly sweet tapioca cake, the white part is salty glutinous rice!



I cannot stay away from having carbs! Food gets me pleasure! I should slowly shift towards discussing today's snack recipe! There back in 1994, I had my appendix removed, today that area is paining! I am a born obese, lazy, inactive with defective body parts; the last one the partner says!

WHAT IS HERBED SALTY WAFFLE?

When I started having waffle, I felt buying a stovetop waffle maker makes sense but I must use healthier batters in it! I keep eating all day, some precautions are required! I used corn meal, rice flour, corn flour, fresh coriander, mint, salt, green chillies, onion, spice powders! That is how this vegan, gluten-free, sugar-free, egg-free, diary-free snacker HERBED SALTY WAFFLE was born. You only need your choice of achar / chutney / sauce to enjoy them! This does not mean I try to avoid carb intakes! I hardly make a sincere effort to introduce a stricter diet; I would cease to live then! Last night, I cooked aloo-cornmeal-maida-atta-coriander-chilli-onion porota for the dinner! I was finding it difficult to roll; managed them between the palms!


My food stories would continue, it should not be an issue with anyone!


INGREDIENTS : 

CORNMEAL : 1 COFFEE MUG
RICE FLOUR : 1/2 COFFEE MUG
CORN FLOUR : 1/4 COFFEE MUG
CHOPPED CORIANDER : 1/2 MEDIUM TEA CUP
CHOPPED MINT : 2 TBSP
CHOPPED ONION : 3 TBSP
CHOPPED GREEN CHILLI : 1 TSP
RED CHILLI POWDER : 1 TSP
CUMIN POWDER : 2 TSP
CORIANDER POWDER : 2 TSP
DRY MANGO POWDER : 1 TSP
SALT : AS REQUIRED
OIL : JUST FEW DROPS TO BRUSH

METHOD :


Wipe clean the waffle maker! We would brush oil in it's interiors, later!

We would mix together the flour varieties and the salt together taken in a bowl. We would add water and prepare a batter using a hand beater. It should not be paste like, neither watery!


Remember not to add a lot of water because the washed and chopped herbs, onion and chillies would also release water a bit!

Add the spices too, mix well!


Keep the batter covered for an hour! Brush with oil the inside base of the waffle maker! Pour the batter! Mix and pour always!




Close the lid and cook in low to minimal heat one side for 3-4 minutes, the other side for 2-3 minutes. 


I had burnt the first batch, even they tasted good. Thereafter, I learnt about the time required.

You can see, this side needs to be done a bit! No issues if we open and check, Belgium need not interfere!

Once a batch is done, we need to brush with oil again before pouring the batter!



Store on a plate! I have bought a mini waffle maker, you can buy a bigger one; electric run or stove top!


Have them fresh and hot for the best taste; you must get your choice of condiment on the side!

MIXED SAUCE NOODLES


 NOODLE HAS TO BE COOKED MORE IN OUR HOME!

I mean, I cooked a fish variety last weekend not of my choice, also the mutton got salty! I am in an irritative state for various reasons! I liked the lau ghonto sans the fish head! These days, I cannot take the smell of hilsa head, big Rui or Katla head! I can only have them fresh; crispy fried! The Rui Mach was fresh and the family is eating it. Because I did not like it while cooking, I did not touch the curry! In such a scenario, I enjoy a noodle bowl, sabu dana khichuri, chirer polao, also oats-dal khichuri, dal-begun bhaja, an egg fry, even pasta with freshly cut fruits & what I had today for lunch; dal er bora, dal, lau ghonto sans the fish head pieces! T is at home today, on asking told he has some work with the bank to settle. We do not like bothering each other! Moreover, I got too busy cooking for a client! The menu was vegetarian and well selected! 


I started to cook around 9:30 am, finished around 4:45 pm with immense help from the Filipino who went for the delivery now. I would share the experience on Saturday! I am pretty tired, sat with Earl Grey tea accompanied by two ginger biscuits!


After a sip or two, I realise that bank work is not the only reason for the leave, it is the election result day in India. I not only guess but believe; not physics, not ship's safety & security; T should have studied psephology, do similar to what  Pronoy Roy & team do! He not only watches but keep analysing the electoral result with people having similar interest! I belong to an world far from economics, finance, election, science; maths; academics as such! I admit my shortcomings openly, does it mean people can constantly belittle me, insult me years after years, taking advantage of my nature, my soft corner for them? Neither T, nor I trail each other at home, in the road, in social media! We have our own lives; so had our parents. Our father had friends, club, morning walks; for long I did not know a husband's job is only to serve his wife & vice-versa! What are some trying to prove & exhibit? That they are friends with every other person, that they would ignore me everywhere, in front of everyone just to prove how loyal they are to their own? At the cost of my self-respect? They should go to behavioural school, degrees are not good enough! I often ask T to behave right! Those people may have good understanding with their partner when they target a soft, weak, spot! I know only one way to resurrect, rejuvenate the self! On her way back, Cristine got her & this self; fruit pie!


Mumma's boy dislikes few things mumma is in love with; fruit pies, bean curries! Ghugni, rajma are not his things! I do not know why I crave for Rajma & rice often!

I AM OPEN TO DIFFERENCES OF OPINION, DIFFERENCES IN FOOD CHOICE!

What I dislike is misdemeanour! In my case; people have every right to speak free to me; that your this, that, those things need correction, that I need to work on them. That people are using human shield against me, triggering at me is a hurt I cannot overcome in this lifetime! I would not hurl similar abuses but never can get over it! I have not learnt to ignore & bypass an issue that is detrimental to my peace! I keep telling the son to behave well with others, also ask my brother the same! Our mother did not demand from us this feature in particular, but I keep telling T, Bhai, Beta about it's importance! I adjust to their needs, cook what we can eat together as a family! We are different individuals wanting good amount of space for us! The son is an extreme case, he was not born to listen! I was also not born to feed anyone's ego, except for mine! I would not betray you on the dining table! Let me serve you all in turns!

I WISHED TO SERVE NOODLES ON MY READERS' BOWLS! WHAT IS MIXED SAUCE NOODLES?

It is nothing special, of I mixed together a little from all the sauces that are there in the refrigerator! You should thank the Almighty, I did not add sriracha mayo in the mixture! I am feeling tired, hence planned to share an easy recipe. Also, after all the luchi-torkari, spicy chicken and fulkopi, polao; the beautiful people in this island do have the right to enjoy a noodle bowl sitting beside me! I do not have a happening face, nor great as a company; was thinking if I sell this vegan noodle bowl MIXED SAUCE NOODLES in Kolkata, it would be a hit or not! It has a little tangy sauce mix, the goodness of broccoli and a star called aloo / potato! The problem is the East and South East Asians would not allow potato in their noodles  and Kolkata may ask for a lot of sauces atop their noodles! I totally dislike overbearing sauces in noodles; prefer to eat them frill free, preparing it my way! 


INGREDIENTS : 

NOODLE : 3-4 SMALLER PACKET, I TOOK TWO
BROCCOLI FLORET : 7-8
POTATO : 1 CUT LENGTH WISE
CUBED POTATO : 1/2 MEDIUM TEA CUP
CHOPPED GREEN CHILLI : 1 TBSP
CHOPPED GARLIC : 1 TSP
CHOPPED GINGER : 1/2 TSP
DARK SOY SAUCE : 2 TSP
VINEGAR : 1 TSP
CHILLI SAUCE : 2 TSP
THAI SWEET CHILLI SAUCE : 1 TBSP
SESAME OIL : 1 TSP
CRUSHED BLACK PEPPER : 1/4 TSP
SALT : AS REQUIRED
OIL : 2 TBSP

PROCEDURE :


The first thing to do is to soak the noodles in hot water that has salt & few drops of oil added to it! 

Soak the noodles not more than 3-4 minutes! Strain off and mix well with 2-3 drops of oil!


Mix together the sauces, add the washed and chopped green chillies to it; mix well!

 
Mince the ginger, garlic, cube the onion! Wash and keep them separately!
 

The washed, cut broccoli & potato are to be marinated with a bit of salt!


The oil needs to be heated taken in a pan or a wok, the minced garlic & ginger be added!

After a minute of stirring, add the potato pieces, cook at minimal heat for few minutes!


Once the potatoes are about 65% done, add the broccoli and onion cubes; cook at low heat for 2-3 minutes!


We would add the sauce mix, crushed black pepper & a little of salt, fold in well! The heat should be at medium!


We would increase the heat, add the noodles & sesame oil; quickly mix together the entire thing preferably using two ladles!


We must eat it fresh & hot for the best taste!
