HASHER DIMER KOSHA



FOR LONG I AM GARNERING THIS WISH!

That is of having Bengali style duck egg recipes in the blog! Actually, Bengali regular egg curry recipe would be two, a little runny curry with potatoes and a thick gravy! The rest are all innovations! What I have seen in the family when young is that egg curries essentially meant duck egg curry! Chicken or it's eggs had no entry in our homes until we relocated to Kolkata! In fact, egg was not at all popular in our family, may be once every fifteen days we would have a duck egg curry, I never had a whole duck egg until I entered the in-laws' place! I believe, our parents need not be that restrictive as they had been! Not lavish I expected them to be; as I grew older, I felt they lacked the aesthetic sense, the urge to raise the standard of living! On the other hand, the man's family had the wish but they lacked the ability! If you have the aspiration, your future generation would try to go way ahead in life! We do not live much in luxury may be because our backgrounds are too simple & that we cannot get out of our middle-class mentality! Also, we firmly believe a good savings keep us safe until our end! There is no requirement to show off in our lives, neither this is a woman who has a social life where she has to exhibit a rosy picture; I mean the worth of her furnitures, glitz & glamour! I am thousands of miles away from such a life! Food engulfs me, look at my lunch today!



YESTERDAY TOO I COOKED THIS & THAT!

It's been long I do not go out to get some food for the man on Sundays, neither he aspires to have! He does have outside food now and then at the office lunches! In my case, it is lethargy & then the thought we are thousand miles apart from the son numbs me, we do not feel like going out for expensive dine outs! When we visited, the son was choosing those eat outs where he might not eat at as a student but wish to! That hurts mumma, true that one day he would treat us at a way more expensive eat out! We do not require it but he has to reach there & mumma-babai wants to stay alive until then! Like today our new sofa set arrived an hour back & something keeps pricking me, when would the son have his full fledged flat? If I do not have such a feeling, I am not a parent! Mumma wants to talk a lot with him, wish he too felt it! If you have a workless life you are bound to eat more! My weight is on rise again I think! I cannot rob myself of this pleasure! Look how beautiful the building looks but that fear of working in a computer, lack of confidence & smartness do not allow me to apply for a job in the hundreds of international schools here! Also my age is a factor!


At least, the food home delivery business had to go but it is just not working! I am not the kind to deal with people I guess! I thought I would earn a bit sitting at home without much of interaction! Anyway, yesterday we had our lunch with "laal shaak, anarosh ilish, pepe-aloo-chingri!" In the evening, we had some 'jhal muri' with our coffee! I was lethargic enough not to chop the onions well! But for dinner, I cooked that noodles with lots of love using potato, onion, chilli, egg, spring onion, vinegar, salt, sesame oil!



In our Kolkata Home, I do not cook much of "ruti-porota-luchi" or noodles for myself, hence I do not put on much! I remain watchful there though end up eating a lot of sweets! Here, in this island, there is food in offer every hundred metres, it is hard to resist for my kinds! There you see our Kolkata home is guarded by all these Gods & Goddesses! They get some food, air, light, cleaning only when our mother visits! She was there last week! The in-laws hardly remain that flexible though they live within 3km! The young group do not wish to stay! When to go next depends on the son's graduation! He has to go & stay for sometime, meet everyone before taking the next leap!


Each day is passing by without me doing anything fruitful! But we watched two good series yesterday on Hoichoi; Rajneeti & Noshtoneer; both good! I am yet to finish the Khaled Husseini novel! Life is simple for me, simpler should be people's approach towards me! I am fond of Partha Dey's mother because she does not understand politics, has no airs or a voice! I am too tired & nuts enough to understand anyone's intent, mood, etc. If I have approached someone with the sole intent of care & the person has hurt me; I would never ever walk the same direction, I love myself enough & do not like complex people with airs!

WHAT IS THIS HASHER DIMER KOSHA?

Hasher Dim is duck egg and Kosha is a semi dry curry! HASHER DIMER KOSHA is a non vegetarian, gluten-free Bengali curry recipe with duck eggs, lots of onion, garlic, ginger, chillies; use of tomato is optional! It is Bengali regular food! I cooked this curry last month in our Kolkata Home, I used to enjoy duck egg curry and like it more now! This island does not sell fresh duck eggs, they sell salted duck eggs that are cooked! Some 13 years back, when I was new here, I mistakenly got those salted duck eggs, was shocked! Now, I have it once in a while at the Food courts! I would not get home salted eggs to cook! Whenever I visit Kolkata, I would cook a fresh duck egg curry once or twice; with or without potatoes! I did not miss having it even in the present heat! If the eggs are fresh, it is better to have than the stale fish in summers! I could not have good quality fish last month in Kolkata! What was disgusting is that an irregular buyer like me is cheated, that dishonesty I hate! In this island, I have learnt to savour egg curries at least once a week or in a fortnight because I detest sea fish varieties! Here they say, duck eggs stopped coming may be after the Vietnam War, it used to come from there! The scarce supply raised the prices! Also, the authorities fear open farming of duck eggs may cause them Avian Flu! Even in Kolkata, the price is getting higher, each duck egg selling for 12 rupees! There too you would get them only in the bigger markets! In our Kolkata Home, it is difficult to click decent for the blog, I could manage only these!



INGREDIENTS :

FRESH DUCK EGG : 4-6
TOMATO PASTE : 3-4 TBSP
ONION PASTE : 4-5 TBSP
GARLIC PASTE : 1 TBSP
GINGER PASTE : 2 TSP
SLITTED GREEN CHILLI : 1-2
RED CHILLI POWDER : 1 TSP
TURMERIC POWDER : 1 TSP
CUMIN POWDER : 1 TSP
CORIANDER POWDER : 1/2 TSP
GREEN CARDAMOM POWDER : 1/4 TSP
CINNAMON POWDER : 1/4 TSP
CLOVE POWDER : A PINCH
CUMIN SEED : A PINCH OR TWO
BAYLEAF : 1
SALT : AS REQUIRED
SUGAR : 1/2 TSP [OPTIONAL]
OIL : 4 TBSP

PROCEDURE :

Take enough water in a deep bottomed vessel and gently place the washed duck eggs at regular temperature! Put them for boil & add some salt, this helps the shell to come out easily later!

Boil them at low heat for 10-12 minutes, switch off the gas burner & let cool! Take off the shell once cool! Wash again!

Prepare a paste with the ginger & garlic pastes, some turmeric & salt, cumin+coriander+red chilli powders, 2-3 tbsp of water!

Make slits on their body, marinate the boiled eggs with a little of salt & turmeric!

Heat the oil & fry the marinated boiled eggs lightly! Take them out! 

Temper the oil with the cumin seeds & the bayleaf! Add the onion paste & stir fry at low heat for 1-2 minutes! 

Add the tomato & spice paste & stir fry at low heat for 2-3 minutes! Add 1 coffee mug of water, stir & bring to boil!

Add the fried eggs to the boiling gravy, stir & cook at minimal heat until the gravy quite thickens! 

Add the washed & slitted green chillies, the cinnamon+green cardamom+clove powder, sugar, stir! Adjust the salt if required! Let cook for a minute, take down!

Enjoy with rice or chapati! I also cooked red lentils curry & raw banana kofta curry on that day!

A MINIMALIST CHICKEN BIRYANI


I BELIEVE I MADE THE COOLEST BIRYANI LAST WEEK!

All along I insisted Biryani is royal & there should not have any shortcut to it! But, I deviated from my stand a bit & wished to create  an all in one dish that we can cook any day, at any place without searching for the exotic spices that goes into a biryani! Later in the post you would see I have used regular kitchen staples in the making of this homely biryani; yet it yielded a good taste & I am happy; the cook's happiness matters! Okay, my family enjoys Biryani & Fried Rices, in this sense they are clean eaters! I am thinking of trying exactly this recipe of Biryani in my Kolkata home in few days! It's too hot there, I have to stay carefully, eat out less! I am trying to remember if I have sustained a 41-42* heat in Kolkata earlier! That I may have long back! Usually, I used to visit Kolkata with the son during the winters, T would join in every alternate year! After the son has joined the college, I go at a time when there is no rush & the air tickets are reasonable, I refuse to visit the Kolkata Markets before any occasion; Christmas, Eid, Durga Pooja, Bengali New Year! I just cannot roam amidst indisciplined crowd anymore! In fact, earlier too I used to shop for Pooja in the months of July-August to avoid the shopping crowd! People are talking about the heat there in a manner that I am fearing! Then, there is my brother who would pick me up from the airport; wants me to lock myself at home, order food from outside and then after a month he would leave me at the airport! I know it is hot, but I need to get repair works done, meet few people, do considerable amount of shopping! There is no point visiting Kolkata if I cannot go out! Also, those who work they are going out of home, right? Let us use umbrellas & take other precautions!

I AM EXTREMELY BUSY TODAY!

I am to cook a platter to offer our father, today is his 6th death anniversary! I just do not wish to do the mention of this occasion in different forums! I would definitely share there the food I offer him today but at a later date! I am to share an Eid friendly Biryani recipe tonight, the daddy did like biryani but not more than a "mach er jhol"! I am not cooking his favourite fish curry today! As told I am caught up with many things at this time! I am cooking for him & writing this blogpost simultaneously!Once offered, I would share the platter here! The platter today is small & simple! I have to go out in the evening for small buys & a standard walk! T is at home, he does not bother for anything but I have to serve him lunch at a decent time, though it gets delayed every weekend! Again today, I served T his lunch post 3 pm! But my men are too used to it, even the son never created a ruckus if food was served late! My child has to arrange each of his meals, mumma is sad about it!Even our daddy never shouted if the mother was late! He would just keep asking for food every five minutes! It is six years, he left us! I believe he would have lived a few more years had his hard earned money not gone into the drain; I would never ever vote for any political party in India! I cannot ever forget how a chit fund robbed him of his finance & peace! The fault is his, he easily trusted people; I never do, my brother never would!



The flowers here in this island do not please me; also the miser self do not spend enough on buying flowers & garlands of choice! Tomorrow, I would cook meat & fish but I just could not manage an elaborate cooking given my schedule for the day! I just made a small effort to make an offering with our father's favourite snacks! Okay, he loved beaten rice with milk & banana, mango but our home never made a "chirer payesh"! Today, I made a "chirer payesh" for the first time & it is good! I thought only Southern India eats this dessert, now I see even the Bengalis do! The rest are "luchi, aloo-potol er dalna, aam-kola-muri"! I would have them after sometime, T had "Luchi with Aloo-Potol er Dalna"!

WHAT IS THIS "A MINIMALIST CHICKEN BIRYANI"?

It is Hari Raya Pausa celebrations all over the island, actually Eid is to be celebrated all over the world, I enjoy being a part of any celebration that speaks of happiness & peace! I do not advocate celebrations where there is involved torture of man & the animal world! These should stop! I did not fix any specific recipe to share for the muslim world, including my close ones! But I cannot share something that they wouldn't be able to eat! As a food blogger, this share thing holds important! It is only last Saturday, after cooking & having a simple, homely meat-potato-egg biryani did I decide to share the recipe! It is a deviation from my stand that Biryani should be royal whose making should be laborious! But in this fast paced world, when quinoa biryani is doing the rounds, I would not hesitate to get A MINIMALIST CHICKEN BIRYANI; I too have to be a part of the race!





INGREDIENTS :

CHICKEN : 6-8 STANDARD SIZED PIECE
PLAIN YOGURT : 200-250 GM
POTATO : 2-3 MEDIUM SIZED
TOMATO : 1-2 MEDIUM SIZED
GREEN CHILLI : 6-7
FRESH CORIANDER : 2-3 SPRIG
EGG : 3-4
LONG GRAINED BASMATI RICE : 1 COFFEE MUG
ONION : 3-4 MEDIUM SIZED
GINGER PASTE : 1 TBSP
GARLIC PASTE : 2 TBSP
CUMIN POWDER : 1 TBSP
CORIANDER POWDER : 1 TBSP
RED CHILLI POWDER : 1 TBSP
TURMERIC POWDER : 1/2 TSP
CINNAMON POWDER : 1 TSP
GREEN CARDAMOM POWDER : 1 TSP
CLOVES POWDER : 1/4 TSP
BAYLEAF : 6-7
CINNAMON STICK : 7-8 MEDIUM LENGTH
GREEN CARDAMOM : 6-7
CLOVE : 7-8
SALT : AS REQUIRED
ROSE WATER : 1 1/2 TBSP
GHEE / CLARIFIED BUTTER : 1 SMALL TEA CUP
OIL : 1/2 SMALL TEA CUP

PROCEDURE : 


Chop the tomatoes, slit 3-4 green chillies; wash them! Clean & wash the chicken pieces!

Marinate the chicken pieces with cumin+coriander+red chilli+turmeric powders+beaten yogurt+salt+slitted green chillies+chopped tomatoes! Mix well & keep covered for an hour! 

Peel, wash & cut each potato half, marinate with some salt & keep aside for few minutes! Thereafter, add them to the chicken marination & mix well!

We are to cook the rice! Wash the rice well! Put for boil enough water & add to it half of the mentioned bay leaves, green cardamoms, cinnamon sticks, cloves, salt!

As the water boils hard, add to it the washed basmati rice & stir! Cook at medium heat until 60% done & pass through a colander! Let all of the water drain!


Peel, slice the onions & wash! Heat half small cup of oil & ghee in a wok, a bit flattened at the bottom! Temper that with the rest of the bay leaves, green cardamom, cinnamon sticks cloves!

Add the sliced onions & fry at low to medium heat until golden brown & crisp! If you fry them at minimal heat, they would become soft instead of been crisp! Take out half of the fried onions!

Add the marinated chicken & potatoes! Fold in well & cook at minimal heat, covered! In between, remove the cover & gently stir! Switch off the gas burner once they are 70% done! Transfer them to a bowl along with the curry!


Boil, peel, wash the eggs! Marinate with little of salt! Discard the roots; chop the fresh coriander & wash!

Grease the same but washed & dried wok with some ghee! Add half of the cooked rice & spread evenly! Add the chicken, potato pieces, boiled eggs & half of the curry!

Add half of the rest of the ghee & few green chillies[if you wish]!

Cover with the rest of rice & spread evenly! Sprinkle the rest of the ghee, the rose water, the fried onions, chopped fresh coriander! Cover it with a heavy lid!

Place a roti pan atop your gas stove & switch on! After about 5-6 minutes, place the covered wok full of rice & chicken in layers, cook in dum at minimal to low heat for 45-50 minute! Switch off the gas burner! We should be done! 

Keep covered for 10 minutes before serving & having! I was running out of enough yogurt for a raita! I prepared a salad with raw mango-peanuts-cucumber-olive oil! Though I am against aerated drinks, a Sprite bottle stays in the refrigerator regular, may be for other purposes!

SESAME SPRING ONION DIM



IF I SEARCH THE WORD "FATIGUE" IN THE INTERNET, I WOULD END UP SEEMING TO HAVE CANCEROUS CELLS IN EACH PART OF MY BODY!

Yep, research if not done properly may land people like me in acute depression! Trying to be positive, I am considering it my after walk effect! I had to walk to the Tekka Market-Mustafa Centre area, for some work. I took a different route to shed off boredom, also I do not like crossing over the Mustafa Centre-Bengali shops area; go to the Tekka Market area only for the flowers & mutton, again come back to the Mustafa area! That too on a Monday when most of the markets in the world wear a dull look with maximum of the shops closed!I was walking just a block after the main road, yet got a bit scared, what if I get lost? But exploring new avenues get us some enriching experiences! I had never seen before this pattern of homes in Singapore, two-stories but not typically row house patterns! I liked the entrances! Once I saw the Farrer Hospital Board, I knew I am on the right track! I reached, I shopped and headed towards the Mustafa Centre & Rajdhani Stores!


I was determined today not to shop anything for us, so did not carry the trolley! That was a bad idea, the packets got heavy, but I must handpick each stuff for my clients! I learnt today M.A.Osmania remains closed on Mondays, got the mutton from Haji! I was desperate to have a 5$ meal today, that too sitting in an AC room; Anand Bhavan is the best place for that! I ordered a Ghee Paper Cone Dosa, was craving for a masala chai or milk-sugar coffee; restrained myself, cannot digest! 


From the Rajdhani Stores, today after a long time, I bought toast biskut & not Britannia's semolina or milk rusk! Last to last week, I discovered a samosa, jalebi & sweet shop in that area selling them at a cheap price! The jalebi I liked, today I got the samosa! You can try their's at No.3, Rowell Road! Their Vada Pao sells at 2:50$, Lassi at 2:50$, I wished to sit & eat! The young sardar gently asked me not to as it also houses a Bar! I was impressed; good behaviour is a big thing, I keep telling the son! I would visit a bar only in groups, not alone, never did with my young son!


Have you ever tried Gondhoraj Lemon; Ginger extract infused chilled Coffee or Tea? It soothes my system, quenches my thirst!



THERE'S YOUR'S TRULY DID A BRISK WALK JUST CASUALLY!

That's me; far from the crowd, challenges, unnecessary talks, arguments, competitions, pinching, back biting, misdemeanour!  


Given my love for food and the wrong kinds, I cannot boast of my body basics! Okay, we had to buy few things locally too & for our household, Cristine got back home with the trolley and I took a train to Potong Pasir, handsfree! From there, I started my walking journey today!

                                            



But what's the point, look what I am eating after a dosa lunch! For dinner, we would have a bliss called Hilsa Curry & Rice! No, I would not have proteins without rice or roti and live an unhappy, unfulfilled life of a Bengali! I proudly made some jilipi yesterday but we need not have it every week!


They were crisp & juicy for the first time, I have to do it few more times to be able to blog about it! I think I would not blabber much, I am tired, need to wrap up! All of a sudden, it started feeling awkward that I am not reading at all! I used to be a voracious reader! I hate sleeping in the afternoons, I have to stop that!

WHAT IS THIS SESAME SPRING ONION DIM?

Only last night we had our favourite "dim-aloo sheddo bhaat" in spite of having cooked food in store! 


T never expresses his wish to have a particular food on a particular day, that irritates me! The son too never asked mumma to do this or that! I would always go ahead & cook; because that is my area of interest! Also, I believe taking care of my family is my utmost responsibility, more so because I am a stay at home! I cannot think otherwise or have any interest in chatting over phone or go out for the same! Off course, I would not want the son's girl to be a useless sit at home like me! Do not we see around working professionals taking equal interest in home making, teaching the kids cooking & household work? I wish the same for our son; they should work together to create a happy home, I would not mind watching both working in the kitchen or doing the cleaning job! But I cannot tolerate if my son works out & at home, his girl remains busy with party after office, keep chatting, makes my son do the maximum! Both T & I have to leave the world with a heavy heart, our's do not have a sibling either! I would expect her not to cross the limits of decency as defined in a middle-class South Asian home as mine; yes, I am a bit scared! Where is that doe-eyed girl, every mother-in-law expects a daughter-in-law like her; we talked last May, thereafter she did not respond as yet! With all these working on my mind, I still wish to be nice to the world, share an easy to cook non-vegetarian, gluten-free egg curry! Egg & Chicken are good proteins; have them regular; feed your kids unless they dislike those! Force feeding never works for the body! I think egg & chicken are both bachelor friendly, I suggested the son to have eggs regular! This  is a simple curry with onion-chilli-white sesame paste & spring onion! Here spring onion is cheap, in the son's city it's pricey! Wow, i
n the past few hours I did not feel drowsy, that's a good sign!



INGREDIENTS :

EGG : 5-6
SPRING ONION : A SMALL BOWLFUL
WHITE SESAME SEED : 2-3 TSP
ONION : 1 STANDARD SIZED
GREEN CHILLI : 3-4
GINGER PASTE : 1 TSP
GARLIC PASTE : 1 TBSP
BAYLEAF : 1
CUMIN SEED : 1/4 TSP
TURMERIC POWDER : 1/2 TSP
SALT : AS REQUIRED
OIL : 4-5 TBSP

PROCEDURE :



Wash & boil the eggs in enough water adding some salt! This may take 12-14 minutes at low to medium heat, half covered! 

Let it cool down, get rid of the shell & wash the boiled egg! Make scratched on their body & rub with salt & turmeric! 

Heat the oil and fry the boiled eggs lightly! Take out! 

Chop & wash the spring onion! 



Dry roast the sesame seeds until golden brown & prepare a paste along with the washed & sliced onions, green chillies!



Re-heat the remaining oil in the wok & temper with the cumin seed & bayleaf; add the ginger & garlic pastes & stir fry at low heat for a minute or two!


Thereafter, add the sesame-onion-green chilli paste & stir fry for 3-4 minutes; add some salt & stir fry for a minute!



Add the eggs and fold in well, stir fry for a minute or two; add a coffee mug of water!

Give a stir & let it boil at low heat for sometime until it gets to be a thicker gravy!



At this stage, add the washed & chopped spring onion; fold in well! Do not cook for more than 1/2 a minute, do not let it's crunch go!



Have the curry hot with steamed rice or flatbread! You can see lentils & mutton on the sides!

TWEAKED BENGALI FRENCH TOAST


 IT IS AROUND 6PM, I WAS OCCUPIED WITH SOMETHING ELSE AND GOT LATE WITH THE BLOGPOST!

What made me busy? Nothing constructive as such! I trimmed a few of our indoor plants, checked on few of the outdoor ones! I have a tiny green space with no knowledge for their care. I have a wish to grow fruits & vegetables though; I appreciate those who do it! In this home, we do not agree on a point except for a few! In a small flat with a mere hedge, you hardly can grow anything! Look at the silly self, I had thrown in the seeds of few litchis after eating the flesh & then this! What to do with the saplings now? Who to give?







Few years back, my Peace Lily died of overwatering! Not that today we have learnt a lot about gardening, just a little bit. I am scared about the health of my Peace Lily!  I have some outside the main door that reached almost our neighbour's door! They are a gentle & composed family, this island's natives! We would at times meet them in the lift, have small talks. The couple have two or three college & office going boys, that I fail to count. They are too shy boys, I felt! Why was I with my greens today? I seek peace in them, when my soul is in an unrest mode! They do not flower much as we do not know about the right use of fertilisers! 

WHAT SETS MY MIND & BODY IN AN UNREST STATE?

Whenever I see something beyond my set of rules & understandings, reasonings; I tag it unnatural, wrong and everything my negativity can call it! Overthinking, I get into a sad state of mind! Also this rain throughout the year is really not my thing! Rain pushes me more into depression, always! There is depression in the sky, on my mind; all over! I do not get how come people quarrel when it smells death around, of their own! No sane being can want dishonour in death, it hurts to see silly insane beings! Wish I could be a messiah and make people understand to live life peacefully and with honour is the ultimate goal we can have! But I have known, not every word flying around has truth in it! To know exactly about an incident, we need to be there talking to the locals, concerned beings! I have decided not to lynch people in public unless they intent to hurt me or my own! These days, I consider social media one big family, we only have to browse carefully! I wish I had wheels fixed under my feet and two wings on my shoulders, I would have flown to my boy & then with him to the places of interest! I wished to pursue journalism after the graduation but my graduating scores did not allow me to! Baby wished to study Political Science & Journalism initially, was it for his love for mumma? But the daddy pushed him towards the subjects his mumma has no interest in! She walks alone lost in deep thoughts she has no connection to but that is her nature since birth! She is having cough & cold, yet she dreads the rain because walking helps release her stress! She is cool enough to pick up some lemon grass from the muddy soil in the roadside and sows in a pot, she would make tea with them, may flavour a light chicken curry too! She is listening to KennyG since the morning, actually the brother used to be more into Western Music, I do not know much about his spouse's preferences!




And there I had a big lunch today, one chicken fry was extra! Again, around 6:30 pm I had Cristine's Nescafe and two cake slices! She decided she should not have dinner today! I had the plan to make aloor porota today, just not willing to; would send Cristine to get two Mac Chicken Meal for Sir & herself! T dislikes fish burgers!

WHAT IS THIS TWEAKED BENGALI FRENCH TOAST?

Why do I call it tweaked? That is because I have spread a tongue tickling chutney / condiment on the bread slices before batter frying them! The batter is off course made of eggs, cornflour, a bit of baking soda & powder, salt, onion, green chillies! BENGALI FRENCH TOAST is how Bengalis have modified the original French Toast in their kitchen! TWEAKED BENGALI FRENCH TOAST is what extra I did spreading that mixed condiment of Kashundi+fresh mint paste+sriracha mayo on the bread slices! Our's was not an egg loving family. However we loved having homemade French Toast often. It is true about every middle class Bengali family of our times, I believe! Our mother did not add the cornflour, baking soda & powder but I have seen my friend Indranil's mother using those to make it crisp & you can see it!


We had it for our lunch yesterday, without T & today we packed his lunch box with bread omelette, his love is egg! But these days, I prefer eggs over sea fish! French Toast are to be had fresh & hot, what a loving snacks for the Bengalis! My unfriendly towards eggs brother enjoys French toast I think, his spouse is an egg lover too!



INGREDIENTS FOR THE INSTANT CHUTNEY / CONDIMENT : 

FRESH MINT : A HANDFUL
GREEN CHILLI : 1 OR 2
CHILLI MUSTARD PASTE : 2 TBSP [I USED HOMEMADE KASHUNDI]
SRIRACHA MAYO : 1 TBSP
SALT : A PINCH

INGREDIENTS FOR THE FINISHED SNACK :

THE INSTANT CHUTNEY : AS REQUIRED
BREAD SLICE : 7-8
EGG : 2-3 
CHOPPED ONION : 1/2 SMALL TEA CUP
CHOPPED GREEN CHILLI : 1 TBSP
CORN FLOUR : 2 TBSP
WATER : 1/4 SMALL TEA CUP
BAKING POWDER : 1/4 TSP
BAKING SODA : A PINCH
TURMERIC POWDER : 1/4 TSP
SALT : 1/4 TSP
OIL : AS MUCH REQUIRED TO DEEP FRY

PROCEDURE :


For the instant condiment, wash a handful of mint leaves  and the green chilli, sprinkle some water and blend to a paste. Transfer to a bowl, add the chilli-mustard paste or Kashundi Sauce, Sriracha Mayo, a pinch of salt; mix well!



Get the washed, chopped onion & chillies on the kitchen top!


Beat well the eggs and add the corn flour, baking soda, baking powder, salt, turmeric powder. Beat well again!


To it, add the onions & green chillies!


Cut off the sides of the bread and cut again to get a triangular shape!


On one side of each slice, spread the chutney, close tight two slices on the chutney sides, dip into the batter! 


Heat enough oil in a wok, not to the smoking point, they should fry well and crisp and not get burnt!


Turn over & fry both sides well!


Hold each piece for a while before placing it onto a tissue paper! 



We must have them fresh & hot to get the maximum of the crispiness!
