RICE VERMICELLI VEGETABLES NOODLE

AFTER A LONG TIME, I GOT LATE STARTING TO WRITE A BLOGPOST!

Many of my readers know the reason, Cristine is in Philippines. It got preponed because her father expired suddenly. She was scheduled to go in the first week of November post our festivities. I am in a mess at this time. Questions like who to help me arrange the puja thali, who to shape the betel leaves with betel nuts for Bijoya Dashami when we would be out on the Nabami Night, who would accompany me to the market before the Lakshmi Pooja, are turning me mad. The situation is such we cannot stop her, that is unethical. Two days post her departure, I am finding out dust and grim from the corners. Today, I bathed the main dustbin. I cannot tolerate stains and smell even in the dustbins.

I told her many times to be cautious about these because her ma'am is a cleanliness freak. She listens, does for few weeks, then stops. She is interested talking about bitcoin, buying property in Philippines. She holds a diploma in Computer Science, takes interest in many matters. She has become part of this home. I shout, at times she  retaliates, we forget too, she massages my frozen shoulders using a medicated oil she purchased with her hard-earned money. All of this is possible because she is a good human being living with us for over ten years. Both side of our family say she is good. She took good care of our son, the man would advice her about savings, about buying farm lands.

EVER SINCE THE SON LEFT HOME, CRISTINE IS LIKE A COMPANY!

Else the middle-aged couple feel lonely. We stay worried about him, he does not communicate. We try utmost to make him behave normal like the majority, he would do what he wants when. At least, I can talk to Cristine. She understands our requirements but her father expired. Every two years she would visit Philippines, it takes me few days to get used to a routine. Except for cooking, I do nothing when she is here. My expectations of cleanliness is higher, difficult for someone to satisfy me.

Above is the apple cake I baked last week, I picked up that cornflakes mixture from the Mustafa Centre, the only snacks from the "chanachur family" I like once in a while. Today, I was out locally to buy a dustbin  for the master bedroom, this and that. A heavily discounted wok at the Isetan caught my fancy. I am not the kind to shop at Isetan, things are pricey there, high quality too. I don't buy pricey stuffs, have no regrets. I have seen they keep giving discounts, I visit often, buy what I fancy. Doing all these, I got late.

WHAT IS RICE VERMICELLI VEGETABLES NOODLE?

I wished to blog about a vegan, gluten-free noodle bowl some day. The vermicelli variety we eat is different. Our island sells noodles made with rice, wheat-flour, sago, cassava. I cannot keep up with variety of noodles, sauces. My kitchen is devoid of excesses. I usually stock egg or plain wheat-flour noodles, at times handmade noodles. Early September, I have cooked rice vermicelli noodles with beans, carrot, onion, garlic, bell peppers. The RICE VERMICELLI VEGETABLES NOODLE snacks is vegan and gluten-free.

  INGREDIENTS :

RICE VERMICELLI : 200-250 GM
RED BELL PEPPER : 1/2 OF ONE
GREEN BELL PEPPER : 1/2 OF ONE
GREEN BEAN : 5-6
ONION : 1
MINCED GARLIC : 1 TSP
CHOPPED GREEN CHILLI : 1 TSP
CHILLI VINEGAR : 2 TBSP
LIGHT SOY SAUCE : 1 TBSP
CRUSHED BLACK PEPPER : 1/2 TSP
SALT : AS REQUIRED
OIL : 2-3 TBSP

PROCEDURE :

Soak the noodles in hot water. Add little salt, few drops of oil to the hot water. Soak the rice vermicelli in that water for 3-4 minutes.

Drain the water, apply little oil to the cooked noodles, mix.

Peel, wash, cube the onion.  Peel, wash, cut the carrot length wise, also the washed bell peppers.

Heat oil in wok and temper with the minced garlic. Add the vegetables except the cubed onion, chopped chillies. Stir at medium heat adding salt.

Add the onion and chillies once the rest are cooked, add the chilli vinegar, soy sauce and stir for 2-3 minutes.

Add the noodles, crushed black pepper, adjust salt if required. Use two ladles to mix at high heat. [I forgot to click the last step].

PRAWN & CHICKEN NOODLES

NOODLES IS TOO MUCH OF A FAVOURITE!

I do not even require such frills in a noodle dish; prawns & chicken, this & that! I / We love our noodle bowls the desi way, to be precise the very middle class Bengali way using potatoes, onion, eggs! Well, in the present day, I would love a burnt garlic tossed noodle dish too! We cannot have our noodles overpowered by too many sauces & ingredients! The reason why I cook our preferred style of noodles! I wish to cook it regular but rice, chapati, dal, fish, meat, veggies; that is Bengali style meals come in between! Ever since the son went to his college & I started doing an intermittent fasting, I keep thinking I need not shop for raw materials every week, I mean fish, meat & vegetables! The amount of dry ingredients we store at home, we can make spaghetti one day & noodles on the other, a litti one day & dal-bata-churma on the other, radhaballabhi thereafter! Another day, I can cook a khichuri! I can have a choice of vegetarian meal for few days, the man needs non-vegetarian food regular! Like some communities, I can have potatoes as the only vegetable option but I do not allow myself! Also it is wrong to have too much of potatoes! The wide array of choice vegetables I must have!

FEELING FESTIVE, I THOUGHT OF ADDING SOME FRILLS TO OUR OTHERWISE REGULAR NOODLE BOWL!

I am not sure about the son, he used to order local noodles too whilst his stay with us, now too he must be! But my otherwise "foreign" man, who loves his steaks & sashimi with chopsticks & octopus fries too, would ask me to cook noodles with lots of eggs, onion, potato with a hint of vinegar! I may add the crunch of fresh spring onions to that! Our mothers did add carrots & green peas to noodles during the winters! You know people, some weeks I have to skip doing "Bengali Bazaar Ghat" & cook a noodle bowl or "roti-prata" or "khichuri-aloor dom" for the family! The idea is not to save money, it is also about cooking & serving fresh & hot! The son is young, mumma loved serving him a variety of food! We do not need too much of food given our age! The thing is I love to cook, the blog is going through updates, our kitchen is always busy, chirpy, happy! Your's truly has few interests in life; cooking & a bit of music!

WHAT IS THIS PRAWN & CHICKEN NOODLES?

It is common to add chicken & prawn in the making of a noodle bowl! Here in South East Asia, they heavily do it! I added chicken mince instead of boneless cubes & totally de-shelled the prawns! The son was not around when I made it, he would not eat a prawn with shell! A little bit of shell in prawn enhances it's taste! I would not touch a prawn whose black, long thing from it's back & the dirt from it's head are not removed! I avoid having prawns outside unless it is completely clear of shells! I like a prawn dish here, an Oriental way of cuisine perhaps; where a de-shelled prawn is blanched, tossed in selective sauces & served! The man's company's Dine&Dance yearly party is approaching towards the end of November, I look forward for the seven course Oriental menu! But this gluten-free, non-vegetarian noodle dish PRAWN & CHICKEN NOODLES borne out from my mind! You can see in the stepwise pictures how simply, with few ingredients I cooked it!

Few other similar recipes to try from my Blog are : NOODLES..... A DESI TOUCHFUSILLI FRUIT BOWLMIXED SAUCE NOODLES!

INGREDIENTS :

NOODLE : 300-350 GM
CHICKEN MINCE : 200 GM
PRAWN : 200-250 GM [MEDIUM SIZED]
CHOPPED SPRING ONION : 2-3 TBSP
CUBED ONION : A BOWLFUL
CHOPPED GREEN CHILLI : 1 TSP
MINCED GARLIC : 1 TBSP
MINCED GINGER : 1 TSP
CRUSHED BLACK PEPPER : 1/2 TSP
SOY SAUCE : 2 TBSP
VINEGAR : 2-3 TBSP
SESAME OIL : 2 TBSP
SALT : AS REQUIRED
OIL : 2-3 TBSP

PROCEDURE :

The following is how I prepare the noodles! I do not boil them but soak in hot water, a little of salt & oil added to it for 3-4 minutes! Thereafter, I I strain & wash it well, toss in a little of oil!

The chicken mince I washed & marinated with salt for half n hour & washed again! This helps to remove any raw smell from it! Then I marinated it with a little of salt & black pepper!

The prawns did I completely de-shelled, cleaned & washed thoroughly, marinated with a little of salt & black pepper!

Cristine cut, chopped, minced & washed all of the vegetables required!

I heated some oil in a wok & added the ginger & garlic mince! Neither I or Cristine can mince in the real sense! Giving a stir for few seconds, I added the marinated chicken mince, washed & chopped green chillies & stir cooked in high heat for 4-5
minutes!

We would add the marinated prawns sans the marinade & stir cook in high heat for 2-3 minutes!

We would add the washed, peeled & cubed onions, soy sauce, crushed black pepper, vinegar, salt & stir cook at high for 2 minutes! We would add the washed & chopped spring onions and give a stir!

We would then add the noodles, sesame oil & use two ladles to mix the entire thing! We would then transfer it to a bowl, garnish with some fresh spring onions & enjoy!

LONG BEAN POTATO ONION NOODLES

IT IS A LATE START TO WRITE TODAY!

That is because all of a sudden, I bumped into an old time interest! Not even old time, the subject is my all time favourite! My attraction for the subject would never cease! I am talking about Lady Diana, I could not have enough of her life, I could not get over with her death! Sometime back, I came across the news of the little boy Billy Campbell of Australia who thinks he is the reincarnation of Lady Diana! I did read about it one or two years back, then again today! Whilst reading, I went further exploring about her ancestral home where she is resting in peace! I was savouring the pictures of the estate & learning more about the Althorp in Northamptonshire, and the clock struck 5:05 pm! I felt let me write down the blogpost! I am like this always, what interests me has got my heart, be it a story, article or a movie! Tonight, you will see me reading this & that about the Althorp Estate! You know my concept of travel & the man's concept of it does not match, else you would have seen busy suitcases at this home! I do understand his responsibilities too, I do not earn! Coming to reading, there was a time when no one could pull me out from the midst of an interesting read! It is sad I do not remain that voracious reader anymore!

IN BETWEEN I WAS EATING A LOT TOO!

I went for a swim down, back home I broke my fast with tea & malpoa! I made myself a homely bhelpuri that has Tabasco sauce! I loved this instant one though I do not have the required sauces at home, I used a chilli sauce & tabasco! My initial plan was to have some butter & chilli sauce tossed corns! Then I kept adding boiled potato, chopped onion, green chilli, coriander, peanuts, puffed rice! I wish the son learns to eat this, it's healthy! At times, mumma feels like weeping, wish I could travel to him every six months & relieve him of the household chores & cook a variety for him & his flatmate! The distance does not let us plan! We want to facilitate his education at first, it is a pride to see he himself is taking up new courses, expressing his wish to do the masters! For his mother, who loves education but herself was not a sincere learner in her student life, it's a joyous thing to see her child being this sincere! He is gifted with a good father always willing to support his academics! Anyway, after eating that huge amount, I again had mango & coffee!

Seriously, I cannot have an oats or salad bowl after eighteen hours of intermittent fasting! At night, I will have a little of rice with okra fry, dal, pointed gourd-potato curry! Again, the man would comment why he has to eat "ghas-pus"! Vegetarian meals they dread! If it is a handmade bread meal, they enjoy with vegetarian sides! Yesterday at lunch we had a young visitor! At night, we had flatbread, leftover mutton, chicken kebabs, pickle!

This kind of diet requires a lot of exercises to be done to keep fit & slim, I dislike giving any amount of jerking to my body, only like swimming & walking, that too at a slow pace! Though I look slimmer in photos, I am not at all!

WHAT IS THIS LONG BEAN POTATO ONION NOODLES?

I live in an island where it rains noodles! How many varieties do you want? Here they do have cooked vegetables on the side with boiled & tossed noodles & rice! I have eaten outside as many varieties here for the past twelve & half years! That may be the reason why I want to cook it at home, a frill-free one adding whatever I want when! What we do not like in a noodle dish are a lot of sauces! I do add a few sauces & sesame oil! Maximum of the time, I wish to keep our noodle dish bare & minimal! This vegetarian, vegan noodle bowl with long beans, potato, onion with flavours from the burnt garlic is what I enjoyed! I named it LONG BEAN POTATO ONION NOODLES! If I have added a Tabasco Sauce & Nihari Masala in it, know that the taste satisfied me to the fullest! You can add black pepper powder instead!

INGREDIENTS :

VEGETARIAN NOODLE VARIETY : 300-400 GM
LONG BEAN : 2-3
POTATO : 1
ONION : 1
GARLIC CLOVE : 2-3
GREEN CHILLI : 2-3
VINEGAR : 2 TBSP
LIGHT SOY SAUCE : 1 TBSP
CRUSHED BLACK PEPPER : 1/4 TSP
TURMERIC POWDER : A PINCH OR TWO
SALT : AS REQUIRED
OIL : 2-3 DROPS + 2 TBSP
I USED TABASCO SAUCE & NIHARI MASALA TO SPICE IT UP, YOU CAN SKIP!

PROCEDURE :

In a bowl of hot water, I added a little of salt, stirred! I broke half each of the noodle cake & added to the lightly salted water & poured 2-3 drops of oil in it!

After 3-4 minutes, I transferred the entire thing to a colander, kept it for rest so all of the water can drain!

Meanwhile, Cristine peeled and cut the onion into thick slices, cut the potato & long beans lengthwise, minced the garlic & chopped the green chillies! Off course, we are to wash them separately!

Taking together the potato & long beans, I marinated them with a little of salt!

I heated 2-3 tbsp of oil in a wok & added the minced garlic! Once they were lightly brown, I added the marinated potato & long beans, folded in well.

I cooked them at low heat for 4-5 minutes, stirring once every minute and sprinkling a little of water. This would not let the long beans lose the colour.

Thereafter, I added the onions & green chillies and stir cooked at high for 2-3 minutes!

I added the noodles, crushed black pepper, vinegar & light soy sauce; folded in well with two ladles! We can season it with salt if only required at this stage!

I further added the Nihari Masala & Tabasco Sauce to celebrate my taste bud!

NO ONION NO GARLIC NOODLE

IT FEELS COLD HERE; WE ARE UNABLE TO SWITCH ON THE FAN!

You bet yes! I keep in store thin bed sheets to cover us between October to February, monsoon is  cool! Those I got from Kolkata! At this time, it seems too much of chill to manage with those thin sheets! A person like me[read fat] is not needing to switch on the fan! Others may laugh at it in disbelief, only the islanders know! The rest might have arrangements, I have to stock something heavier sooner! All day I was out, came back & took shower at 5:30 pm; had my first meal at 6 pm! This is the noodle bowl that I am blogging about today!

What I am willing now is to watch Ballabhpurer Roopkatha streaming in Hoichoi, just not getting time; I either have piles of work at home or outside! Because I am not used to doing any amount of work except for cooking, there is mismanagement all over! I do enjoy writing a blog post, just too tired at this time, then, I cannot let go of it either! What else fruitful thing do I do? Although my blog does not generate any amount of revenue, I enjoy piling it up with new recipes! But what was I doing all day?

IT WAS A ROUTINE VISIT TO MY DOCTOR; AND...

I ended up straightening my hairs! They became too dry & unmanageable recently! Hope, I do not go bald, the way I am doing experiments with my hair! How am I looking?

All the time I am into music; call me romantic? I do not know; today I am with, "bhebechilam tokey phiriye debo ami" and "tera hone laga hoon, khone laga hoon"! I do not know why you guys need others to spend quality time; I and my choice of music make a good pairing! I think I am romantic; just cannot savour "kirtan" kinds! I have spent a lot on my hairs, how to manage my budget let me see! You are to limit your expenditures unless you are a billionaire! Our son hopefully has learnt it! I am worried, there is a snow storm due in their city, who knows if he has stocked enough food & other necessary stuffs! He does not wish to discuss! Mumma keeps getting new recipe ideas like this noodle bowl for their son, other son & daughter likes living away from their home!

WHAT IS THIS NO ONION NO GARLIC NOODLE BOWL?

With the Filipino on leave, I try simpler recipes, specially for the lunch boxes! Mincing garlic, ginger & cubing onion for a noddle bowl early morning? I felt feverish, with no one to help me! But today's clinical record says I have lost weight, my blood sugar level & pressure measurements are great! I came up with this vegetarian, vegan meal this morning; a NO ONION NO GARLIC NOODLE just in thirty minutes! I wake up early but do not feel like getting out of my bed until the sunrise; then hurry! Here, I do not follow our mother's work pattern, she is in Puri today for the next ten days; with her youngest brother-in-law and his wife from Assam! Her son & daughter-in-law made all the arrangements! She used to go every year in February with the father & stayed for ten-fifteen days! I have stronger reasons for getting a noodle bowl today! I wished to thank the team at the dentistry clinic for their fabulous service, also the hair experts of today! Every hair studio yesterday refused me, today's was a simple, small neighbourhood one beside my doctor's chamber who did it for me! You do not see such messy parlours in Singapore, but their service was great!

They worked pretty well, I was happy with the service, happier with their behaviour! But would these people eat potatoes in noodles? Then, we love it!

INGREDIENTS :

NOODLES : 250-300GM
GREEN PEA : A 1/2 SMALL TEA CUP
SWEET CORN : 1/2 SMALL TEA CUP
CUBED POTATO : 1 SMALL BOWLFUL
CHOPPED GREEN CHILLI : 1 TSP
CRUSHED BLACK PEPPER : 1 TSP
VINEGAR : 1 TBSP
LIGHT SOY SAUCE : 1 TSP
SALT : AS REQUIRED
OIL : 2 TBSP

PROCEDURE :

Break the noodle cakes in a bowl & pour super hot water in it; add few drops of oil & some salt!

Give a stir & keep as is for 3-4 minutes and strain! Wash for 1/2 a minutes under the running water! Add a tsp of oil and mix well! Keep aside!

Cube the potatoes & wash, marinate with some salt, also bring into normal temperature the frozen corn & green peas! Wash & chop the green chillies!

I used the following for seasoning, we keep our noodle bowls bare minimal!

Heat the oil in a wok & add the marinated potatoes, stir and cook at minimal heat until done!

Add the green peas, sweet corns & chopped green chillies to the wok & stir!

Add the vinegar, light soy sauce, the crushed black pepper, some salt; stir cook at high for a minute!

Add the cooked noodles and incorporate everything well using two ladles. Adjust the salt if only required!

It tastes the best if served & eaten hot & fresh!

FRESH HERBS NOODLES

THE WORLD MIGHT MOVE AT A FAST PACE; I SIT IDLE!

What else to do? What was I doing since the morning? I made some chapatis for T's lunchbox because we had to finish the paneer curry I cooked last to last Saturday! Cristine & I had the same for our lunch!

I must stop cooking a variety on Saturdays because all of a sudden an idea pops up & I start with cooking arrangements on a weekday evening, click & serve past 10 pm! The best is to cook authentic Bengali Food for Saturdays & Sundays; then cook fresh & experimental for our weekday dinners! Then it would lock me at home. Though I stay at home most of the time, I like that freedom of going out for walks & lunches outside anytime! If you have a food project in hand for the evening, you cannot afford to get tired back home & feel drowsy enough to lie down on your couch! Today, I did not go out but went down for a swim! I wasted time struggling to remove my nail polish; I wear gel colours that are tough to remove at home! I tremendously dislike worn-out nail polish on my nails. Either my nails are well painted or they are totally clean without any traces of colour! I read we should not put colour on our nails 365 days a year, they need to breathe from time to time! Gel Colour is not good, specially when I go for cheaper deal; I would not go for a 100$ worth nails treatment, neither at home I can treat them well! This is my only luxury, well kept finger & toe nails! Just see, when the rest of the world is busy been productive, all I do sitting at home is beautify my nails! I do not have any other luxury but, concerning my face, body, etc. But I do not understand why a woman scientist or a doctor, professor, engineer cannot also apply a face puff, eye kohl, lipstick? Balance is required! Like a kindergarten & primary level teacher should be well dressed with make up & flowers tucked in their hair to see happy faces in the class! Does at all T wanted me to be independent? He guided the son to focus on what career would suit him the best! In my case, he does no help to start with something! Even I have no intent to spend from our savings, but he can help me earn a bit without spending anything! He does not even understand, he has no idea what amount certain news affect me, not even the son! What only is happening is that all the spammers are messaging me privately with lucrative job offers, haha! Wish this world be what I wished for, an utopia!

YESTERDAY WAS A STORE BOUGHT BIRYANI SUNDAY!

Sounds strange na, given I do not buy biryani here? Yesterday, T & I went to the Mustafa for a requirement of mine! Over two years, I did not buy a biryani, neither from Fakruddin, nor from Thallapakati, also not the North Indian kinds! I bought a packet from Fakruddin & yesterday the meat did not smell & was well cooked! I think their Friday, Saturday, Sunday's biryani meat quality & chef are different, better than the weekdays'! I got two jilipi for myself too!

Eating disorder is a mental disease I suffer from! This biryani tasted good, the meat was of fair quality, but looking at the amount of oil / ghee deposit at the bottom of the rice & on my last spoon, I felt I should cook biryani once every 2-3 months at home! This morning too I had stomach ache! The thin chapati did no harm to me! Last night I had that fry & boiled egg with rice! A lot of rice went inside yesterday! Today again I am unstoppable! Fakruddin's jilipi are as fat as I am & each costs one dollar, the lowest in this island I think! It is tasting good, just a bit chewy!

Yesterday's treat was on me, I would make a public post after may be cooking my versions of them at home! We would lessen more frequenting the restaurants, the son loves a lot! I feel incomplete without him, doing at home at least engages me well! Let our child get a full fledged job, on top of that let all of the world stay safe & secured! It seems, the news around would not let me have peace! I eat, I walk, I swim, I shop but I do not remain in the best of my mental health! Dr.Gobindo Sen, in 1995 told me only 2% of the population do not make it back home by night! I asked there would always be a fear that 2% can have mine! I have to live with the fear all my life!

WHAT IS THIS FRESH HERBS NOODLES?

It may be in 1982-83, these earthworm like thing flooded the Kolkata market! I mean it became accessible to the common man since then, our kind of families did not go for fine dining in the Park Street area or to the China Town! The later was a fearful area for our kinds living in the suburbs! I do not remember about the exact time of the normal noodles packet flooding our city but Maggi came in 1983, I pretty remember! As part of the evening tiffin, we would have it whilst watching Jonny Soko & His Flying Robot! What I cannot recall is how I coped up with so much of food; back home from the school I would have rice meal around 4:45 pm, then noodles around 6:45 pm & then a dinner at 9 pm with rice! Even a remote village in the entire India would sell Maggi & normal noodles packet, Indians did ferocious experiments with poor noodles; adding any vegetables, even turmeric! I wish to blog about noodles er chocchori too some day, I must admit I loved those too in other homes! My family never went to that extreme! We knew about the soaked green chilli pieces in vinegar then too! From then to loving to have Oriental noodles & fried rice at Capri whilst in college and then today, love for the same continues! Now the son is in college, his father has more affordability than our father; but happiness is to know the son behaves pretty middle-class; he does not spend much on entertainments! May be he would go to a music concert of choice, also we ask him to spend the weekends with friends! The streets in that country are too quiet, I was feeling eerie! What I saw was they are quite fond of ramen, I guess from there to here & in our country of origin, this vegetarian, vegan  noodles dish FRESH HERBS NOODLES would suit well! I enjoy my noodles this simple, we do not even toss it in sauces! Done with three varieties of green herbs, it requires minimum ingredients & time to prepare!
