EASY QUICK-MADE CUP CAKE


 It's 3:30 pm Wednesday. My aching bones are seeking relaxation with read, music. I would remain busy next two weeks, thought of sharing new recipe today! It's never ritual, instead pleasure! Besides being my reader, if you follow me in social media handles, you would see me sharing details next week onwards! I am publicity seeker unlike rest in family. In few occasions, I ask their permission to share their pictures, details publicly. I am proud, they have to accept. Achievements make me happy, whosoever's, my family's more. I have habit of enquiring about others' academics, university rankings with same interest I take in our son's. Why is it considered poking, its quality jealousy doesn't plague me. I want Human Race to progress steadfastly. That I am worthless lazy bone is another issue.

I am supercharged when it comes to cooking, playing with ingredients! Years back, I tried sattu / chatu / roasted gram flour cup cake, wasn't satisfied. Weeks back I did again, was happy with outcome but top got overly baked, I dropped idea to blog about it! Being busy, I thought of trying two recipes this morning; one was these cup cakes, another one was herbs breads with gluten-free flour. I picked up cake for today's bake. I don't know if Cristine is reason for my energetic self in kitchen, love for cooking runs in family! What is wrong in saying that? I don't deprive my man, son, eat up everything I cook. Its six years son left home, mumma couldn't come into terms with his absence. Mumma wants to spend more time together because in few years he would have his own family, we wouldn't remain his prime! What his father & him means by "there is time" I don't know. "Now, This Moment" is real, no one has seen tomorrow. I wish three of us get more of time to be together, neither I wish to delay entry of daughter to be in family. If son can't choose, we are here to find one. A couple of islanders told me they choose, there is no system of arranged alliances here. This I don't agree to, when kids get confused, parents have to handle, help them settle in life.

This lady doesn't spend words without munching. Since yesterday, I clicked the following! Cristine cooked the vermicelli upma, she takes interest, does good, lacks the patience Bengali style cooking demands!


Sometime back, I had microwave made beaten rice-oats-chanachur-onion-green chillies-fresh coconut medley! I think it's wrong to have oats without washing, soaking it. I am scared, I can't afford to fall sick now. My system got weakened, I don't wish to live thinking how sick I am, I must practice my interests!



Well, I may not blindly trust alternative medicine but amla/gooseberry has vitamin C, I don't have issue accepting that. For our treatments, we would visit medical professionals. Saying this, we aren't disrespecting anyone. I go for TCM massages, never would trust having medicinal leaf juice to cure tumour growth!

Its 5:10pm, lets wrap. What more to say about this vegan, gluten-free, coconut milk, banana, roasted gram-flour EASY QUICK-MADE CUP CAKE


Baking cake without milk, yogurt, condensed milk, eggs is challenge! Doing them, I accept challenge, love having them! Neither man, nor Cristine refuse to have, they say my sweet stuffs are too low in sugar! If only I knew all these when son was recommended gluten-free diet for three years. Gradually he was allowed to have by his paediatrician. He loves chilled milk, yet I ask him not to have dairy products much. He loves to drink what Singapore loves drinking chilled; Iced tea to sugar-free chiiled Oloong tea to chilled soy milk. They ask why can't I let go? I say I would if he behaves normal like other kids, calls regular, sends pictures.

Well, mumma cooked raw mango spread too today, would send a little to kids around thinking how mine loved on bread.


Our mother did jam, jelly at home besides getting Kissan's, Druk didn't come regular. In parents' absence, my brother, I fought, thereafter sat together with biscuits, butter or jam, ate 16-17 biscuits at a time. I had been obese for half century! The cup cakes ain't looking great but they are moist inside, crumbly a bit, tasting good!


INGREDIENTS :

CHATU / ROASTED GRAM-FLOUR / SATTU : 1/2 COFFEE MUG
RICE FLOUR : 1/4 COFFEE MUG
CORN FLOUR : 2 TBSP
PSYLLIUM HUSK / ISABGUL : 2 TSP
BAKING SODA : 1/4 TSP
BAKING POWDER : 1/2 TSP 
BANANA : 1 STANDARD SIZED
COCONUT MILK OR CREAM : 50 ML
OIL : 2 TBSP
SUGAR : 1 SMALL TEA CUP [I USED BROWN SUGAR] [YOU MAY NEED MORE]
VANILLA ESSENCE : 1 TSP
VINEGAR : 1 TSP
HALVED CASHEW NUTS TO GARNISH!

PROCEDURE :


Mix together corn flour, rice flour, roasted gram flour, psyllium husk! Use hand beater!

Blend together banana, oil, sugar, coconut milk, vinegar, vanilla essence. Pour onto dry ingredients. Incorporate well. 

Keep covered for 10-15 minutes. Remove cover, add baking soda & powder. Beat to incorporate well. 

Pro-bakers don't beat batter too much for cup cakes may be.

Mine is convection mode microwave oven. I kept inside baking stand, set to pre-heat at 160*C.

I poured half of each paper cup with batter, placed half of one cashew nut on top of each. Gently tapped cups on kitchen counter. 

Place cups on baking tray! Place baking tray atop stand. 

Bake at 160*C for 17-18 minutes. 

Your machine may take slightly different time.

Fresh bakes would taste best with choice of beverage!

VEGAN GLUTEN-FREE COFFEE CAKE


An interesting series is featuring on Netflix; Mamla Legal Hai! I ain't a television buff, the bread winner is! I watched lot until 2006! Mamma, toddler son, Deepa didi, later Sushoma didi lived together, watched daily soaps. We watched while feeding him, 2-3 hours he would take per meal. His patient father served for 1&1/2 years. Thereafter, it was my turn with son, I learnt patience. when he was 2&1/2 years of age; Deepa, thereafter Sushoma left job. I felt watching daily soaps isn't okay for toddler, his concern. I had to divert his mind to constructive something. We continued with Thomas The Tank Engine, Dora The Explorer, few more. That time Kolkata television network aired great Telefilms; I would rent CDs of good movies. 

My neighbours, Saraswati, a part-timer was all through beside me, her younger son Pratik too. Engaging Pratik with him, I went shopping for essentials. Both sides of family were support, if I couldn't manage my home, what's the point starting to live separately? Some friends would go to parents or in-laws the moment their men sailed, I scolded them. Relationships demand transparency! We need keep aside differences, be cordial. 

Repeat saying these, I ain't claiming anything from son, we miss him, father doesn't express, I do! He has to call us regular, share updates. I remember of sleepless nights when he refused nasal drops, kept crying entire night. I informed family after meeting paediatrician Dr. Deepak Ray next morning. I remember how mothers turned him mad, doctors in Singapore have no idea to what extent mothers, patients like me can nag doctors. The complicated diseases, poor patients South Asian doctors handle, weird questions from both educated, uneducated mass, medical experts in first world countries having star facilities can't think of. Government hospital doctors there face immense trouble, overwhelming patients vs financial crunch! No offence meant, we have idea what hazards can acute poverty,  malnutrition may get!

The son's father asked me not to disturb the doctors. Once we changed neighbourhood, came in paediatrician Dr. Anindya Kundu, such a calm persona. Son was 15 when we visited him after long gap for his last vaccine, he recognised me, asked "apnake chena lagchey, cheley niye ashten!" Why not? For small matters, I would call him. Son was in standard-2, in school he had stomach ache, we mothers would sit at Haji Saheb's home outside of school, DPS Megacity. The moment nurses told he is in day care bed, I instantly took him to Dr. Anindya Kundu's home in Salt Lake although nurses told nothing serious it was. He was kind enough to check him, he was getting ready for nap before running to Charnock hospital in evening. 

His Hospital was in neighbourhood, I refused waiting until evening! Having friends like Kana, panic is natural. Those days Dr. Amitabha Pahari was big name, he was attached to Apollo Hospital, moment one sister like Suparna's elder son would catch fever, she used to call me, "S didi, get ready, lets go to Dr. Pahari immediately"! Then one day, Dr. Pahari told her calmly, "you need not come with his fever to me! I have critical child patients to treat!" The breadwinners gave us every luxury, yet we girls told them kids need fathers, not chauffeurs! They chose Mumbai, own properties; I chose Singapore, peaceful secured life! May be we don't have that financial strength to have everything together. I am thankful to parents' humble upbringing, our mother's, maternal grandmother's affinity towards higher academics; our son's MS degree with good score feels more happening! One son like's great score with scholarship wasn't matching the job offers he got, I told if you compromise that would be disrespecting your abilities, go for MS. If I can motivate young boys & girls a little, my life is fulfilled! I keep saying this. At times I tend to give suggestions to established selves, they may flak me at my back!

Tomorrow we would be attending marriage reception, all friends, hosts would wear heavy jewelry, saris; I would go minimal; I don't own many, neither have urge. I prefer antique silver jewelry, hardly invest, thankful to parents again. The Bread winner can't say I create ruckus demanding this, that! Yet, life isn't straight line, we are bound to face ups & downs. The fear of what's next is the only fear I live with, escalated once son left home. Enjoy your time together, give family your utmost! Don't be calculative! It hurts when I hear about broken homes, I don't judge, I say if you have built home, don't set apart over trivial issues, kids get affected, neither we can live together with wide differences. 

We cannot reach conclusions for all matters, an escapist like me avoids giving verdicts, I try to pacify, better at spreading love, serving home cooked, warm food on your plates. Man is home today, I cooked wow chicken roast for lunch!





Beside self cooked rice meals, I do like local choice items with sticky rice, mapo tofu, stir fried potato, crisp chicken if only hot. 



I can't manage edges of gluten-free, vegan roti, they puffed up, I felt happy! My demands aren't much; but I needn't be this expressive. I fail to get what others think, expect of me! 


On occasion of Poila Baishak/Bengali New Year, snack lover Bengalis require mustard-mango sauce/Kashundi, I made at home!



Amidst chaos, choice food brings comfort. San-wich's sweet treats are love, homemade Dalia treats too. 

My cautious self also crosses boundaries, mere mortals, our steps can't be totally measured! My VEGAN GLUTEN-FREE COFFEE CAKE is a measured treat, minutely executed! At one point I faced confusion, beautifully handled. I loved a big piece today with tea!



I baked two dairy-free, vegetarian, vegan, gluten-free treats yesterday, above went for a dear, met over dinner at Kenny Roger's Roaster's at City Square Mall. While you try this cake done with gluten-free flours, oats, banana, olive oil, walnuts, let me get pictures sooner to my public profile! 





INGREDIENTS :

GLUTEN-FREE FLOUR : 1 & 1/2 COFFEE MUG
OATS : 1/2 COFFEE MUG [BUY GLUTEN-FREE]
CORN FLOUR : 2 TBSP
PSYLLIUM HUSK / ISOBGUL : 1 TBSP
INSTANT COFFEE GRANULE : 1 TBSP
BAKING POWDER : 1 & 1/2 TSP
BAKING SODA : 1 TSP
COCONUT MILK OR CREAM : 200 ML 
BANANA : 1 STANDARD SIZED
SUGAR : 1 MEDIUM TEA CUP SIZED
VINEGAR : 1 TBSP
VANILLA ESSENCE : 2 TSP [YOU MAY USE CINNAMON POWDER]
OIL : 4 TBSP
WALNUT : 8-10 [OPTIONAL]

I roughly browsed few coffee cakes in the internet, went my way!

PROCEDURE :


Initially, I mixed coffee with flours, we wouldn't do that, instead dilute coffee granules in warm water. Also sprinkled some sugar before baking, we should always do that after it cools post baking!

Mix together dry ingredients except coffee granules, sugar.

Dilute coffee granules in warm water. I used 50 gm of coconut powder, diluted it in 1 coffee mug warm water. Add both coffee, coconut milk to dry ingredients mix.

Wash, peel banana, blend together with sugar, oil, vinegar. 

Add to batter, also vanilla essence, broken walnuts. 

Beat, pour into cake tin. Our batter is ready!

Place cake stand inside oven, convection mode microwave oven in my case. Preheat oven at 180*C!

Place the cake tin atop stand. Bake at 180*C for 25 minutes. Temperature settings differ from machine to machine, be careful about time taken.

STEAMED CHOCOLATE CAKE


Today too its late start, couldn't do any amount of exercise. You can't blame me, I visited local market, came back, made something, that I would share in blog next Monday or Tuesday. I must share something before CNY celebrations! After fifteen years of stay, we are foreigners but I definitely love the island city. I do not earn for a living, neither a student of Economics or Finance, I romanticise with the idea how scot-free I get to roam here, how secured we are. Once we go back, I would adjust in few months, it's my place but my mobility would be severed! I would wish those who celebrate CNY sitting far off, never would speak negative about it! I wished if this island could naturally confer us foreigners permanent residency after a decade of stay like few other nations. At the same time, the strictness proves how much coveted this island is; it's about demand & supply! I lack nationalist feelings, I don't believe in thorny walls but in love that connect Humans! Didn't I tell you I live in an utopia, at least dream of one 24/7.

Where was I? Okay, since morning, I had been constructive, although weighing machine shows staggering rise after meals at Popeyes', san-wich! It is sweet intake that's poisoning me again! Forgetting ordeal we go through is good & bad at the same time.





I had garlic bread sometime back I bought from a local bakery. Jicama here is eaten as vegetable, not sweet as in our place, for us it's fruit. This morning, I had steamed bao & dumpling. Yesterday morning I had aloo-cheese-thousand island dressing sandwich I made, lunch at Popeye's, at night had rice. I have to control sooner, weight loss is 70% diet & 30% exercise, rigorous exercise I am unable to do. I never push myself hard, don't like others forcing anything on me!

I bought a selfie stick few months back, didn't use, I need to have a mind for everything. Let's see when I can make good use of it. If last year I was mentally & physically drained, this year may be we are passing through some kind of an uncertainty, man and son are carefree types, good that they are. I am the worry-monger, it may be my leisure or pleasure, whatever!

How much Cristine pours positive notes inside my ears, I keep panting every half an hour. What bothers me I don't know! What, who beacons me that too I don't know. The less we divulge, speak, express, is better! The proverbial "bobar shotru nei" is right! I don't want irritation controlling me. If one can get me happiness, peace, calm; come, sit beside me, let me treat you; else forget me. The restless world today requires healing!

I cooked the following to share just before CNY!


To make it vegan, gluten-free was a challenge I won, they had to look better. 15th, Sunday is Shivratri, all day fasting isn't an issue for me. 

On occasion of Valentine's Day, I thought of sharing this STEAMED CHOCOLATE CAKE recipe prior to celebration. Our young adult son may be celebrating! Let them enjoy with mumma's vegan, gluten-free, dairy-free treat. Why alone young? The worn out, old hearts do have right to tremble too! To me love is life long celebration, it's as natural as breathing is. 


Life would have been better if our weird son discussed his course of life with us; our friends were regular visitors to each other's home, I wanted to treat his friends, he never introduced us to them. Our friends were close to our parents, siblings. The thought of loosening of bond turns me crazy. Where are we heading to? In which world? I see my world empty almost; my thoughts, my emotional depth, good or bad; doesn't match with the maximum! This fast paced world doesn't have time to stop by me, explore my mind, care about it!

Commitment, Responsibilities I stand by! As food blogger, I wished to amalgamate CNY and VALENTINE's DAY! Shibratri is personal, I would share something we can eat on Sunday!



INGREDIENTS :

RICE FLOUR : 1/2 COFFEE MUG+2 TBSP
CORN FLOUR : 2 TBSP
PSYLLIUM HUSK / ISABGUL : 2 TSP
BAKING SODA : 1/4 TSP
BAKING POWDER : 1/3 TSP
DARK CHOCOLATE BAR : 1 [I USED MEIJI BLACK]
COFFEE POWDER : 2 TSP [YOU MAY SKIP AND ADD MORE OF CHOCOLATE]
COCONUT MILK : 150ML [I USE COCONUT POWDER MIXED IN WARM MILK]
BANANA : 1 LARGE
SUGAR : 5-6 TBSP [YOU MAY ADD MORE]
VANILLA ESSENCE : 1 TSP
OIL : 2 TBSP
I USED FRESH STRAWBERRY TO GARNISH

PROCEDURE :


Take together rice flour, cornflour, psyllium husk in a bowl, mix!

Blend together coconut milk, banana, sugar, oil, vanilla essence, add to dry mix, beat well.

Melt chocolate in microwave oven taken in bowl. Cool, add to batter, beat well.

Keep covered batter for 25-30 minutes.



I added water to manual steamer pot, put to boil on gas top! 

When the water started boiling, I added baking powder, baking soda to batter, few drops of water on them to activate well, beaten for a minute!

I placed a brown paper foil inside cake tin, poured batter into it, tapped it on kitchen counter.

I placed it in middle atop mesh, cover steamed at low heat for 25 minutes.

My Chocolate Cake fluffed up as desired. Enjoy with your choice of fruits!

VEGAN GLUTEN-FREE CHOCOLATE CAKE


I am pretty busy since morning, felt lazy too! It's twenty eight years I entered this home, became one like them, we hardly follow clock! I told you all, initially I had trouble to accept, then they ain't kinds who follow rules, except my father-in-law, he loved discipline though believes in personal freedom. How much of poles apart me and my mother-in-law are, she and her man built a happy home for their kids, taught them right values! My maiden home definitely taught us values, but there had been too much of discipline, us friends would visit the man's home every week to taste fun & freedom. Their home always lit bright with love, the door was open 24/7 for visitors, even if they didn't know what to cook the next day. 

Our father was fun loving, the reason why he was great friends with my Maa-in-law. Our mother championed discipline, academics, work. Till this day, the amount of energy she has is surprising, she can work 18 hours a day, so does man's sister! My brother & B prefer to follow my man, long back they don't follow rules of that home. I tell mother, let them rest over weekends, work life is draining. I expect people to be hygiene conscious, take regular shower, brush teeth, visit dental clinic every year. In the present day, mani, our mother eats lunch at 4 pm, me too somewhat like that without being productive like her. We are different nature-wise, I am a day dreamer, romantic, she doesn't know what romance is. However, we love to cook, mend our home.

My point of discussion today is the son, it's his birthday! Mumma used to cook a platter! Ever since he left home in 2020, I try to share in the blog something of his choice! Mumma went to temple this morning!




That's the real me! You can't force me anything. Today, I walked back home after having appam for breakfast! Last Tuesday, I let myself get drenched. I tend to fall, else I enjoy letting myself be, such exhilarating! Yesterday, I remained busy baking this diary-free VEGAN GLUTEN-FREE CHOCOLATE CAKE, wished to celebrate son's birthday with my readers!


Every December, he visits us but two-three days post his birthday, this year he wouldn't! It's a weird thing, whoever known people share their birthday with him are normal beings! What Astrology says I don't know, may be timing matters. I believe it half, it may not be science, full circle. Would my baby forgive Mumma's not that conventional self? She never stops her mind to traverse places, his father never accuses, my friend of over forty years!


The morning ray wrapped me with warmth, I couldn't enjoy more time, I needed to make temple visit! Cristine stood by me all smiles, I like her company! Tomorrow, I would call mani, in-laws, visit Hougang to meet my favourite girls. Before Xmas, I need go for beautifying my nails; Santa loves red! Son was only 7-8 years old when he told Santa is myth, I got he is photocopy of his father, grandpa! He bonds with Nono over Formula-1, computer games. Does he need mumma anymore? Am I required by anyone?

However, I enjoy every bit of this life! My dreams take me to lap of Himalayas! The moment I think of journey, I lose interest! I have vertigo, motion sickness, fear; I collapsed each time we travelled! Hill stations wouldn't be near aerodromes, railway stations! There is no point going if you do not savour the journey! Instead, roaming around this island is pleasure, thereafter, getting new recipes to world, getting to pen down my thoughts in the process is more of pleasure! Try this vegetarian cake with walnuts, I got in hand this gluten-free flour pack at the Mustafa Centre!




INGREDIENTS :

GLUTEN-FREE FLOUR MIX : 1 COFFEE MUG
CORN FLOUR : 1 TBSP
PSYLLIUM HUSK : 2 TSP
COCONUT MILK OR CREAM : 150-200 ML
FRESH ORANGE JUICE : 1/2 COFFEE MUG
BAKING SODA : 1/4 TSP
BAKING POWDER : 1 TSP
SUGAR : 1/2 COFFEE MUG [ADJUST AS PER YOUR TASTE]
OIL : 4 TBSP
CHOCOLATE : 2 BARS [I USED MEIJI'S BLACK CHOCOLATE BAR FROM DAISO]
VANILLA ESSENCE : 1 TSP
WALNUT : 6-7

PROCEDURE :


Take dry ingredients together in a bowl, give a good mix.

Blend together orange juice, coconut milk or cream, oil, sugar. Add it to dry ingredients. Beat well.

Take chocolate in microwave proof bowl, microwave for a minute in low heat, cool, add to batter. Beat well!

Grease cake tin with oil, place butter paper at bottom!

Pour batter. Tap on kitchen counter to level. Place walnuts atop.

Mine is convection mode microwave oven, I placed low height stand inside, preheated oven at 160*C.

Thereafter, I placed cake tin with batter atop stand, baked at 160*C for 30 minutes.

Once cool, transfer to a plate. Garnish as per your wish, I am poor at it, but the cake is tasting good, trust me!

BANANA COCONUT CRANBERRY CAKE



I THINK I MAKE DECENT BASIC CAKES!

Although baking for decades, I couldn't master the art. I keep to simple bakes. It can be basic cheese rice, homely pizza, baked roshogolla, basic cakes. Honestly, most in family would want to have roshogolla as is. Looking at baked roshogolla in Kolkata sweet shops, I feel averse towards thick cream thinking of amount of sugar involved in it. Meals consisting of rich meat & fish curries, richer sweets, desserts, biryani, ghee pulao sounded alluring even few years back. These days they cause me fear, neither I crave. This is caution I wish to preach, it isn't hatred towards any faith or religion. A bowl of choice fruits, low calorie tiffins, light fish, chicken curries, homemade breads, small bowl of rice, vegetables bowls of choice are enough for me. I wish son to accept, enjoy "chirer polao, idli, dalia khichuri, semolina upma kind of meals. I understand he has career to build, crucial exams to cover with good scores, yet I am worried about his health, he sources every meal from outside. His father, I at least stay together, have an asset like Cristine to look after us.

I HAVE MADE LITTLE CHANGES IN MY EATING PATTERN!

At this time, I am not doing intermittent fasting. I suffered bloating. I am eating smaller meals every 2-3 hours of intervals. At this time, it is helping me. Today since morning until now I had one cream cracker biscuit with tea [not in picture], then had 2-3 tbsp of muri / puffed rice soaked in water [not in picture], thereafter I had a small piece of cake with tea, thereafter lightly made beaten rice upma. At night, I would have normal Bengali meal with small amount of rice, Hilsa fish curry, Spinach, Red Lentils Curry! 



Our lunch yesterday had been Bengali meal with Chicken Curry, Yam with Prawns, Dal for me. At night, I cooked Whole-Wheat Flatbreads, had with Eggplant Bharta. 





Today's blooms made me feel happier, a green corner is therapeutic.

WHAT IS BANANA COCONUT CRANBERRY CAKE?

I bake with few ingredients present in kitchen. I needed to use up some shredded coconut, cranberries. I thought of baking a vegan, gluten-free cake with them. I had bananas too that moistens cake. From this thought, easy bake BANANA COCONUT CRANBERRY CAKE was born. Baking it was hassle free. I don't experiment with ingredients much, specially in case of bake. You all may have noticed I keep measurements of primary ingredients for baking cake same in each case, this saves me from failure. I wished to share vegan, gluten-free cake for occasion of Thanksgiving but it didn't happen. This time I didn't think much before giving shape to my plan for an easy bake.




INGREDIENTS :

OATS : 1/2 COFFEE MUG 
RICE FLOUR : 1 TBSP
CORNFLOUR : 1 TBSP
PSYLLIUM HUSK : 1 TBSP
BAKING POWDER : 1/2 TSP
BAKING SODA : 1/4 TSP
BANANA : 1 BIG
DATE : 10-12
SUGAR : 1 TBSP
DRIED CRANBERRY : 2 TBSP
GRATED COCONUT : 4-5 TBSP
VANILLA ESSENCE : 1 TSP
OIL : 5-6 TBSP

PROCEDURE :


I took oats, baking powder, baking soda in a bowl, gave it a mix.

I added rice flour, cornflour, psyllium husk, grated coconut to it, mixed well. I blended together dates, oil, banana, sugar, vinegar. 

I poured wet mixture, vanilla essence, gave it a mix. 

I added dried cranberries to it, mixed.

Our cake batter is ready, I kept it covered for 15 minutes.

Mine is convection mode microwave oven. I kept baking stand inside, pre-heated oven at 160*C.

I placed air-fryer brown paper case on cake tin, poured batter, spread it evenly, placed it atop baking stand.

I closed oven door, baked cake at 160*C for 20 minutes.

Having cake fresh would get best taste. Else refrigerate once cool.
