BANANA COCONUT CRANBERRY CAKE



I THINK I MAKE DECENT BASIC CAKES!

I had been baking for long, yet could not grasp every aspect of it, could not master the art. What I do is take small steps, keep myself limited to simple bakes. It can be a basic cheese rice, a homely pizza, a baked roshogolla, basic cakes on a regular basis. Honestly, most in the family would want to have roshogolla as it is. Looking at the baked roshogolla in the Kolkata sweet shops, I feel averse towards the thick cream thinking of the amount of sugar involved it. Meals consisting of rich meat & fish curries, richer sweets, desserts, biryani, ghee pulao sounded alluring even few years back. These days they cause me fear, neither I crave for such meals. This is a caution I wish to preach which is not hatred towards any faith or religion. A bowl of choice fruits, low calorie tiffins, light fish and chicken curries, homemade breads, a small bowl of rice, rustic vegetables bowls of choice are good enough for me. I wish the son to accept and enjoy chirer polao, idli, dalia khichuri, semolina upma kind of meals. I understand he has a career to build, a crucial exam to cover with good scores, yet I am worried about his health, he sources every meal from outside. His father and I at least stay together and have an asset like Cristine to look after us.

I HAVE MADE LITTLE CHANGES IN MY EATING PATTERN!

At this time, I am not doing intermittent fasting. I suffered bloating. I am eating smaller meals every 2-3 hours of intervals. At this time, it is helping me a bit. Today since the morning until now I had one cream cracker biscuit with tea [not in picture], then had 2-3 tbsp of muri / puffed rice soaked in water [not in picture], thereafter I had a small piece of cake with tea, thereafter lightly made beaten rice upma. At night, I would have a normal Bengali meal with small amount of rice, Hilsa fish curry, Spinach, Red Lentils Curry! 



Our yesterday's lunch was Bengali meal with Chicken Curry, Yam with Prawns, Dal for me. At night, I cooked Whole-Wheat Flatbreads, had with Eggplant Bharta. 





Today's blooms made me feel happier, a green corner is therapeutic.

WHAT IS BANANA COCONUT CRANBERRY CAKE?

I bake with few ingredients I have in the kitchen. The other day, I had to use up some leftover shredded coconut and cranberries. I thought of baking a vegetarian cake with them. I had bananas too which are good   for making a cake moist. From this thought, this vegetarian easy bake BANANA COCONUT CRANBERRY CAKE was born. Baking it was hassle free. I do not experiment with ingredients much, specially in case of bake. You all may have noticed I keep the measurements of the primary ingredients for baking a cake same in each case, this helps me not to fail with the recipe, waste the ingredients used. I wished to share a vegan & gluten-free cake for the occasion of Thanksgiving but it did not happen. This time I did not think much before giving shape to my plan for an easy bake. I wanted a sheet pan like cake look, hence used this tray for the bake.



INGREDIENTS :

SELF RISING FLOUR : 1 COFFEE MUG [Instead You may mix together 1 coffee mug refined flour, 1/4 tsp baking soda, 1/3 tsp baking powder]
PLAIN YOGURT : 4-5 TBSP
BANANA : 1 STANDARD SIZED
SUGAR : 5 TBSP [I USED BROWN SUGAR] [YOU MAY NEED MORE]
DRIED CRANBERRY : A FISTFUL
GRATED COCONUT : 4-5 TBSP
VANILLA ESSENCE : 1 TSP
OIL : 3-4 TBSP

PROCEDURE :


I blended together the plain yogurt, sugar, oil, banana. 

I took the self rising flour in a bowl, pour the wet mixture on it, mixed well.

I added the grated coconut and dried cranberries to it, mixed, beaten well.

I added the vanilla essence, beaten again for 2-3 minutes. Our cake batter is ready.

Mine is a convection mode microwave oven. I inserted the low height wired stool, pre-heated the oven at 160*C.

I greased the oven tray with oil, poured the batter on it. I tapped it lightly on the kitchen counter, then placed it atop the wired stool.

I closed the oven door, baked the cake at 160*C for 30 minutes.

Having the cake fresh would get the best taste.

EASY CRANBERRY CUP


I FEEL SATISFIED AFTER COOKING A DISH PROPERLY!

How I wished that feeling to be accompanied by money. Though I am happy with the budget I have set for my life, I wished to earn my own pizza or burger. I used the words happy and budget together as I cannot be a spendthrift. I could not spend much when I worked, I kept saving. My types hardly spread the wings wider, we are conditioned to live within budget since childhood. Cristine went to the Moss Burger chain. They are offering two chicken burgers for 8$, 5 small Hash Browns for 4$ only on Mondays. I wanted to avail the offer though not fond of burgers. 




I liked the hash browns. I told earlier I want bun maska and chicken or fish cutlet separately on my plate. Having "chai-biskut" thereafter proves I dislike burger, have it on rare occasions.

YESTERDAY WAS ANOTHER LONELY SUNDAY!

Starting at 1:45pm I was alone at home, yet could not watch a single piece. I was hooked to the social media, on print media and you-tube wanting to follow one single incident, such pathetic it is. I still search Google for Ms.Guha's case, a well educated, beautiful lady  who was poisoned to death. Heavyweight offenders get acquitted in our country. I was only 7-8 years old at that time, remember remotely how there was an uproar about the incident, a beautiful, meritorious girl's death made our parents, neighbourhoods, state cry literally. Since then, I have a dislike for that institution, even if I had the quality to work under those suspicious heads, I would not have applied. I didn't wish to send our son there, it has blood stains at it's doorstep. They are a powerful family who presently run another institution, roam freely. We tend to forget easily, this becomes advantageous for the wrong doers. I fail to understand what kind of a child did the mother give birth to who chose money, power instead of getting the dead mother justice. Also, we become fans of the celebrities, of their artistic qualities, they may not be good human beings, unworthy of our praises. The recent case may go unsolved I fear because fair judgements are rare in my country. Everyone knows everything but to prove it gets impossible, power stands supreme. If we are well off and keep our eyes closed and mouths shut, we get to live happily ever after, else we would be sent off. I feel good if I get to eat my choice of meals.



WHAT IS EASY CRANBERRY CUP?

For quite sometime I have been watching similar recipes around, in the western bloggers' spaces. I already have a similar recipe in the Blog. I see the westerners prepare this kind of cup cakes for their breakfasts. They use eggs in the batter that I did not wish to add. Moreover, I wanted this EASY CRANBERRY CUP to be vegan and gluten-free too. That leaves us in confusion you know. The pro- bakers approve or not, I got used to baking simple cakes without buying an almond flour worth 16$ per kilogram. I find out ways to bake a vegetarian cake, also try to keep it vegan, gluten-free specially on days like Rakhi Poornima / Rakshabandhan. We live in violent times, we cannot expect anyone to protect us. We just have to be cautious as much as we can, keep our cool. This is not an era "where the mind is without fear and the head is high" works if we want to live. I recently bought this square cup cake tin online from Shien Official.


INGREDIENTS :

OATS : 1 & 1/2 COFFEE MUG
CRANBERRY : 2-3 TBSP
BANANA : 2 STANDARD SIZED
CORN FLOUR : 1 TBSP
BAKING POWDER : 1/2 TSP
BAKING SODA : 1/4 TSP
SUGAR : 3-4 TBSP [I used Brown Sugar]
OIL : 2 TBSP

PROCEDURE :

Take the oats in a bowl. In a blender, take the rest of the ingredients except for the cranberries.

Blend them to a paste and add to the oats. Mix the ingredients roughly.

Add the cranberries and mix again.

Grease a cup cake tin with few drops of oil and half fill with the mixture. I bought it recently from Shein Official.

Mine is a convection mode microwave oven. I did place the low height wired stool inside the oven, closed the door and pre-heated the oven at 180*C.

Thereafter, I did place the cake tin inside, baked for 15 minutes at 160*C. They are done.

They were crisp on the top when fresh and hot. Enjoy with your choice of beverage. From the kids to the adults, everyone would be happy to have the baked vegetarian, gluten-free, vegan sweet cups.

PINEAPPLE SEMOLINA CAKE


FOOD IS NOT ONLY ABOUT THE TONGUE & TUMMY; IT ASSOCIATES US TO MEMORIES, TAKES US TO A PERIOD!

I never did like puffed rice, not even post marriage. When other Bengalis praised about and finished bowls after bowls of muri with chanachur & chop; I would have the chop or shingara alone. In the present day too, I am not fond of the favourite Bengali pairs like "muri o chanachur; muri o chop". I developed love for the "muri-chirey-khoi-aam, muri-chirey-khoi-kathal, muri-chirey-khoi-kola, muri-narkol-gur, muri-khoi-chirer moya". These were the snacks our grandmother & mother prepared and stocked at home.


Weight watchers would not eat these, but I cannot ever stop having these. My hanging belly stagnate at one place. I am not taking pride in it, I am just unable to quit my favourite fruits, snacks. The little I could do is that I am using less amount of oil, lessened a bit the amount of carb intake. I tend to eat a plateful of rice if I get a choice of fish, mutton, vegetarian dish on the side.


Last night, I got disappointed, my yeast bread did not get fluffy, there formed no pockets and I would not call them pita. The man enjoyed, asked for more. I do not know if the son sources handmade breads from outside once in a while.


Last evening, I was watching "Dristikone", my mind was not into making some decent roti. I wasn't getting to watch it anywhere, all of a sudden I found the links for the movie in three parts. Recently, I enjoyed watching Lapata Ladies too. Heeramandi is a periodic substance, I do not have the energy to sit through.

YESTERDAY, MY BROTHER DID SEND THIS.

Bhai was excited about that watch style Punjabi button his company Nippon gifted on the Father's Day. How happy the father would have been if he got to see this, both the parents love / loved watches. Neither I, nor the man or the son wear a watch. 




His photo takes me back in time, so does certain food bowls. He had extremely sharp features, his face resembles a woman younger to me. Not in my circle; she is beautiful, I am not. Yet, I do not feel jealous of her, my man says she has  both spine and personality, no one can deny her physical beauty. She might not be soft spoken but she does not seem to me a tricky self. I do not like tricks played with my stupid self, the reason I mingle less, I do not even with my long time friends. What they say, what they do; why they do like that I do not get. I am only interested in my son's academic & career path, of that of the other kids around. Food remains important in my life. This entire morning I was updating few earlier blogposts, did not like one; recooked that platter quickly, luckily everything was there in my kitchen. I am truly a passionate food blogger, if only I had the technical knowledge required to make it a famous one, to take it to more of people. Last April, we travelled to the son, just three days before that I payed this tribute to the father.



Cristine takes care of him and our home when we travel. Your parents would always remain a part of your journey. I ask the son to pick up certain qualities of both his maternal & paternal grandfathers. Both the grandmothers did a lot for him too. I got my family's support bringing him up, life got mundane for us after he left home. Parties and crowd regular is not my thing, homely get-togethers I do like.

WHAT IS PINEAPPLE SEMOLINA CAKE?

Oh! I find semolina cakes incredibly tasty and easy to make. In fact, semolina is a choice ingredient to me, I make idli, cake, salty snacks with it. We like the halwa made with it, not the other gooey stuffs. The son had so much of "sujir payesh" as a toddler that he doesn't touch anymore upma or halwa made of it. He does not enjoy chirer polao, nonta suji kind of tiffins, sandwiches took them over. But the son loves paratha varieties, pulao way too much. Why am I delaying to get my version of "nonta suji" to the blog? I have to soon. Today, there is a birthday in the family, among the friend circle and then there is the Eid Celebrations. This vegan PINEAPPLE SEMOLINA CAKE suits all the celebrations. I would not buy ingredients worth 50$ to cook a dish, not for a cake at all. Also, I am repulsive towards dairy products. I had a bowl of pineapple in the refrigerator, it's paste alone was good enough as the wet ingredient. I had no compulsion to get a vegan cake, it just happened. Unfortunately, it isn't gluten-free, I wasn't willing to work too much on a Sunday morning for a gluten-free version. A cake using fruit salt suits me.



INGREDIENTS : 

SEMOLINA : 1 COFFEE MUG
SWEET PINEAPPLE CUBE : 2 COFFEE MUG
SUGAR : 1/2 COFFEE MUG [I USED BLACK SUGAR]
OIL : 2-3 TBSP
ENO FRUIT SALT : 2 TSP
VANILLA ESSENCE : 1 TSP

PROCEDURE :


You can see this is a few ingredients cake, I enjoy doing frill free stuffs. At first I thought of baking an oil-free cake, later used a little of it. 

We would take the semolina in a bowl. We would blend the pineapple to a paste. I did not use a strainer to get the extract.

We would add the pineapple paste, sugar, oil to the semolina and beat well.

We will add the vanilla essence and beat again for 2-3 minutes. We would keep it covered for half an hour.

Thereafter, we would add the Eno fruit salt and immediately stir and mix for a minute. We are to transfer the batter to a greased & flour dusted cake tin.

In my convection mode microwave oven, I inserted the low height wired stool and preheated the oven at 160*C, it is the set temperature in mine.

Thereafter, I placed the cake tin with batter atop the wired stool and baked it for 25 minutes at 160*C.

The cake is supremely moist and fluffy.

BANANA ORANGE OATS CAKE

AFTER EVERY SPECIAL PRAYER RITUALS AT HOME, I WOULD PREPARE SOMETHING WITH THE LEFTOVER FRUITS!

That too after some 15-16 days post the occasion. I love my choice of fruits but I am not supposed to have too much of them. The man would take a little only in his lunch boxes. The son ate fruits when packed in his snack box. I do not know really if he buys fruits for himself these days. Today, whilst on my morning walk, I saw a 11-12 year old boy in the school uniform having cup noodles. Such scenes make me get  angry at the parents. There isn't any excuse when it comes to parenting. Even if both the parents are working, it is not an ardent task to wake up early, prepare a butter bread toast or boil some noodles, broccoli, carrot, onion; season and feed the child and then send to the school. There is a primary school, a high school, a 7-Eleven outside of our back gate, such scenes are rampant; kids buying packaged food from the stores. I do not think the parents should have any excuse when their kids' health is concerned. I cannot thank the mother enough for teaching us the important lessons about home care through her tremendous dutifulness towards her family. For both of us family & kids are prime; we do not need much of resources to spend partying, chatting with friends. We only have weaknesses for buying saris which are not that pricey, household stuffs. In my case, I enjoy sitting alone in an eatery. I cannot just mingle with people. Most hilarious was a client, she gave me good business a few times and then almost claimed, placed a condition that I have to roam around the island with her. She  might have been a nice girl but I couldn't agree to that. Many a woman in this island made unnecessary calls without any intent to buy food from me. In business, I would seek profit and name, not friendship at all. A person of few words, I had to put an end to this. Although I love watching my friends party, sing and dance; I feel awkward amidst a crowd. There are many in the same food business, unfortunately, the Bengalis too want chole-bhature or idli-dosa on their plate instead of "lau-ghonto, chichinge-boti, dhokar dalna". Bengalis are those Indians who have forgotten their own food; they eat biryani, fish fry, chicken kobiraji, chicken and paneer masala day and night. At least the reels say that. 

WHY DOES OUR SON HAS TO PROVE HE IS DIFFERENT?

It feels he is in constant endeavour to prove he is weird and a rebel. Doesn't his mother pay enough attention to him that he has to behave this weird to get her occupied in his thought 24/7? Some 20 years back, all my friends would say he does all the weird acts to irritate me, that he behaves normal in my absence. Since then, until now; all my attention revolves around him, he doesn't need to do anything for that. May be for few years I became a bit absent minded, I curse myself for that. I should not have missed a single moment of his company. In fact, I need not curse myself, that happened because all of a sudden his father wanted him to be independent; I wasn't allowed to sleep with my child, bathe him, feed him, kiss him, hug him. What emotional upheaval I went through only I know, a void was created. I believe everything has a time, I need not had to be distanced with my playmate after a decade of staying with him alone, he was my only living play dough 24/7 whose childhood I shaped as per my wish. Nope, we are not in a strained relationship, it is our joint decision to keep our son's need our top priority. I do not like people talking about spending lakhs doing the interiors of their home but tell their kid / kids they do not have money to sponsor their kid's education abroad. However, they have money to buy property in two-three cities of India or buy jewellery for the spouse. That way I am proud of the underweight partner, I get angry when both my men ignore my emotional needs. I then keep myself happy cooking and eating. Yesterday, I ate those and gained 500 gm by this morning.




I had more rice than usual because the sides were dried fish, Hilsa fish and veg dal. More of wrong was to have two bowls of puffed rice and coconut. At night, I was to make appam, but the iron wok betrayed, the sides got stuck. The same batter was used in a non-stick pan. Having consumed a big amount of coconut caused me wind this morning, this keeps happening since my childhood. Too much of coconut consumed may cause acidity and wind in many, I am one of them.

WHAT IS BANANA OATS ORANGE CAKE?

I think this is the easiest and simplest of all the cakes I have made until now. Whatever I am unable to do is complex mathematics to me. All those three & four tier designer cakes are as complex as science, mathematics, geography taken together. But I love to bake and keep on doing that. Not only this vegetarian, gluten-free, vegan BANANA ORANGE OATS CAKE is easy make, we found it tasty too. I am  fond of using fruit juices in cakes, not really fond of dairy products, eggs, chocolates. All those chocolate rice & rainbow rice, sugar coated fruit strips atop a cake put me off. Fresh Fruit & Cream atop a cake is a love though the cream would have egg & dairy products in it. That too I avoid after the son relocated. To eat fancy stuffs you have to have an equally enthusiastic partner. He shows no interest, I too do not wish to spend on a choice of pastry only for myself. A Bengali mother would pause and think, "my child might be hesitating to have a 21$ meal in a choice of eatery or he may have skipped two meals to have that over the weekend! Let me wait until he gets a deserving job." However, mumma keeps buying from the Lazada, Shein, saris & kurtis while in Kolkata. This is the time and onwards I / we want the son's concern for us and attention. We are waiting for him to settle. We will see if he gets normal, else what to do, we would keep travelling from the Himalayas to the Kanyakumari. It is not right to complain about your kids unless they cause major harm to you. Anyway, I made myself something between "nonta suji and sujir upma" today, I cannot eat the gooey upma neither I had the patience of sprinkling a bit of water a few times on the roasted semolina to make what I enjoy.


I do not know why the son dislikes upma, poha, dosa. He would love  sausages, bacon, breads on his plate. His father too but he enjoys upma, chirer polao too. It is from him that we have learnt about upma in the early 90's.

INGREDIENTS :

OATS : 1 COFFEE MUG
FRESH ORANGE JUICE : 1/2 COFFEE MUG
MASHED BANANA : 1/2 COFFEE MUG
SLICED BANANA : 1 SMALL TEA CUP
RICE FLOUR : 1/4 COFFEE MUG
CORN FLOUR : 2 TBSP
SUGAR : 4 TBSP [YOU MAY NEED MORE] [I USED BROWN SUGAR]
BAKING SODA : A PINCH OR TWO
BAKING POWDER : 1/4 TSP
OIL : 2-3 TBSP

PROCEDURE :


Mix together the orange juice and the mashed banana pulps. 

Take the oats, rice flour, corn flour, baking powder & soda in a bowl and mix well.

Add the wet ingredients, oil and the sugar to the dry ingredients, mix loosely. We do not need to beat vigorously.

Grease an oven proof bowl.  Add the batter, tap on the counter to level well. Arrange the banana slices atop.

Mine is a convection mode microwave oven. I did place the low height wired stool inside the microwave.

I preheated the oven at 160*C. I did place the bowl with batter atop the wired stool, closed the door and baked it for some 20-22 minutes. We were done.

Temperatures may vary in different machines. The cooking time may slightly differ in your's.

The only mistake I did was that I sliced the bananas thicker, I had to slice them thinner. If you are eating it fresh, there would not be any issue. If you refrigerate, the banana slices would darken if you wouldn't slice them thick.

VEGETARIAN LADOO CAKE


IT MAY NOT BE MY INNOVATION BUT I AM LOVING IT!

I am talking about the cake I am going to blog about today. I have seen "bonde paratha" doing the rounds in the social media, I have seen state of the art ladoo cake in the internet, I cannot be that decorative, neither can eat that amount of sweet. My initial plan was to get an oats cake to the blog today, but looking at the dates of various occasions around, it felt let me share something more of relevant to the Dol Purnima / Holi celebrations. Of course, this suits on an Iftar table. The oats cake can come for the Easter. The actual fact is that I have got a box of ladoo last week and only I had to eat them. Cristine is not fond of desi sweets, the man would not eat anything extra than the bread, noodle, pasta & rice meals the entire Ramzan month, he would have the breakfast and leave for the office without his lunch box, he would eat the dinner thereafter. There is no room for sweets after his limited intake of whisky or beer each night. Sweets & Fruits are only packed with his lunch box at this home. He had been travelling since yesterday morning. Cristine went for her off day yesterday. Tell me what to do all day? I too found the sweets too high in sugar, I cannot eat much of the store bought sweets, I can do them better. This idea to use the ladoos in a cake, popped up all of a sudden. I thought I need not have to add sugar either. It feels bad to eat something without sharing it with the son & the man. Also, the senior of the men would be travelling often now onwards, thats what he says. I cannot live without all my pleasures. Food gets me the necessary high.

AS PART OF OF MY PLEASURE TRIP, BELOW ARE WHAT I DID!

What I eat in a day is pretty alarming, they are all high in starch food. Within the limitations of my inability to eat clean, I try to adapt to certain healthy habits. I try to fry the potatoes in the air frier or in the grill mode using few drops of oil. May be I do not eat this amount of potatoes on a regular basis.





My lunch was broccoli-onion-pasta with a cheese slice atop yesterday. Even when I would have lonely meals, I would arrange it well. Because I am not a good pasta maker or pasta is not among my topmost favourite food, I had to eat a bit of oats+homemade yogurt+palm sugar post the meal. I even love too much a bowl of muesli, do not allow myself; the muesli mix would be high in sugar. At night, I preferred a vegetarian meal. How I love a "dal-aloo bhaja" meal. These days, I love my choice of vegetarian dishes too. I was also watching a series on Hoichoi, Cristine came home pretty late. And today is another day. I miss the early morning & evening time chitchat with the man. About the son, I had to let go for his good but his parents have be together at one place. The kids too are at peace when they see their parents are not fighting much.  And now let us see what I had for my first meal today. It was a blunder. I had soaked some small pearls of Tapioca to prepare "sabodana khichuri", the pearls melted almost. I prepared a paste of it, ginger, green chilli, salt, refined flour; added some fruit salt & water, made those dosa crepes. You can see some were rightly done, some weren't.


The measurements of the ingredients in a dosa batter is important, I want my dosa to be crispy & thin. I cooked that "aloo-peyaz-roshun bhaja" in the air frier using few drops of oil.

WHAT IS THIS VEGETARIAN LADOO CAKE?

As told in the beginning, I was finding the store bought ladoo sweet having too much of sugar, I use way less of sugar in my homemade sweets. After using the ladoos in this easy bake VEGETARIAN LADOO CAKE, I felt I made good use of what was seeming to me too sweet. What brings satisfaction to me is that I used few ingredients that are always present in our kitchen, even the flavouring agent is a natural cinnamon powder. I think I did not do anything, the cake got baked by itself. I do not think you need to add any extra amount of sugar in the cake batter, I did not. If you want you may add the sugar but remember, the ladoos or bonde whatever you are using are good enough substitute for the sugar.

INGREDIENTS :

REFINED FLOUR : 1 COFFEE MUG
LADOO SWEET : 5-6 [ALTERNATIVELY BENGALI BONDE 250 -300 GM]
BOILED MILK AT ROOM TEMPERATURE : 1/2 COFFEE MUG
PLAIN YOGURT : 5-6 TBSP
BAKING POWDER : 1/2 TSP
BAKING SODA : 1/4 TSP
CINNAMON POWDER : 1 TSP
OIL : 4-5 TBSP
I DID NOT USE SUGAR OR HONEY, YOU MAY.

PROCEDURE :


We will take together the refined flour, baking soda, baking powder & the cinnamon powder, mix well.

We will break the ladoo sweets pressing gently, if using bonde sweet then this step is not required.

In a blender, we with take together the milk, yogurt, oil and blend until incorporated well.

We will add it to the flour mix and beat well for 5-6 minutes.

We will add the maximum of the sweet balls to the batter leaving a little. We will give a stir and not beat.

We will grease a cake tin with few drops of oil and pour the batter into it. We will tap the cake tin on the kitchen counter to level the batter. 

We will add the rest of the sweet balls on the top layer of the batter, tap again.

Mine is a convection mode microwave oven, I did place the low height wired stool inside, preheated at 160*C.

Thereafter, I did place the cake tin atop the wired stool and baked at 160*C for 20-21 minutes.

Temperatures vary in different machines, the time taken may be less or more in your's.
